Beef and Irish Stout Stew

my fave beef stew recipe to date - I have the pre-cut meat (just put it in a freezer bag with flout and montreal meat seasoning and shook it up, browned it in some canola oil and marsala wine and onion, added that to the crockpot, then used a bottle of guiness and beef broth and worcestershire sauce in the pan, poured that in the pot with 2 cloves garlic, mushrooms, a rutabaga (lg round turnip), carrots, yukon gold potatoes, celery, 3 bay leaves, paprika filled until my crockpot is to the brim - will serve with Irish champ -yum! Slow Cooker Split Pea Sausage Soup

Loved it!! Used turkey kielbasa for the sausage added a ton of carrots and celery and a vidalia onion. Cooked it all night in the crock pot - Ate it for the next week - Yum!

Mock Tuna Salad

Love it! (I agree that it doesn't taste like tuna - but who cares - it's Yummy!) I mashed the chickpeas with a fork for texture, added helman's olive oil mayo, dill, garlic powder, curry and a little bit of pickle juice (I don't like sweet relish). Then I added a piece of cheddar and two pieces of bread and made a tuna melt on my George Forman grill - Yummmmm

Melt-In-Your-Mouth Meat Loaf

really liked it and instead of using the plain panko bread crumbs - will use the stuffing or the flavored ones. Used lipton soup mix instead of dried onions as I had read also. Did Not add the sugar and loved the topping. I also ran out of time and cooked it on 350 for an hour in a loaf pan (and checked with my meat thermometer for it to hit 160). all in all - easy and yummy - I had red skinned garlic mashed potatoes and greens with it :)

Garlic Mashed Red Potatoes

I'm not sure why these don't do it for me - but even after "doctoring them up" with a little more butter, salt pepper and dill they were just kind of there. I generally like mine with butter, milk, salt and pepper - so it must be the garlic putting me off. I'm sure it's a great recipe - I'm just the one in a mil that doesn't love it - sorry :(

Portobello Penne Pasta Casserole

Really good! I hate messing with frozen spinach - so next time will use the fresh - or broccoli :) I used the new 4 cheese italian blend light shredded cheese which I think really added to it and definitely the light soy sauce! I did add pepper and might even add a little more spice next time - rich but yummy :)

Marie's Easy Slow Cooker Pot Roast

OK - it's not even quite done yet as the veggies aren't quite squishy enough (I think I had the crock pot on too high) but I taste tested and wow! I cut the recipe in half and added more veggies than called for as well as organic beef broth to cook in (I added more than called for) Also used a ton of lee and perrins (steak sauce), a bay leaf, a whole vidalia onion and two cloves garlic as well as removing the xtra fat in the beginning and putting fork holes in it and doing the montreal seasoning rub as others had suggested - I'm not even going to share this time - this stuff is Awesome! :)

Slow-Cooker Chicken Tortilla Soup

I LOVE this soup!! I threw a jumbo flash frozen chicken breast in the bottom of the pot and added everything else in - used organic low sodium chicken broth and never got around to the cilantro or the tortilla strips LOL - it was awesome!

Tamra's Lemon Artichoke Pesto

OK - Seriously - waaaay too much garlic! I changed it to 4 large cloves and probably would have been ok with 1 or 2. I used pignolia (pine) nuts instead of walnuts - and think that if I ever try it again with a lot less garlic I'd probably like it :) I added romano to the parmesan and think I'd try adding a little cooked spinach next time as well.

Seven Layer Tortilla Pie

Loved it! This recipe and site inspired me to get back into cooking - (I've had springform pans for Years and never used them before - who knew?!) I added in black olives and used no-fat refried beans and since it was a wider pan - the bigger tortillas. Everything was low fat or no fat and I washed the black beans etc to remove as much sodium as possible. I served it with guacamole - YUM!
