Currently abstaining from dairy, but will soon be eating goodies and drinking moo juice again :)I am not a vegetarian, but my significant other is, so I have a large repertoire of veggie recipes, with a few vegan.

My cooking triumphs
I created a wonderful lemon berry cake with mascarpone cheese frosting... it is by far my favorite original recipe.
My cooking tragedies
I make delicious cakes, but they are always so ugly... lop-sided, frosting sticks to everything except the cake, etc. I made a wonderful carrot cake, and thought I would experiment with multiple layers of different sizes. I tried so hard to level the tops of the layers before I stacked them, only to have wound up with the the leaning tower of carrot cake.

West African Peanut Soup
This recipe is amazing, as listed! However, it's even more amazing if you add 2 diced sweet potatoes (we left the skins on them). An unusual, but delicious combination of flavors. If you make the rice separately and add in as desired, it makes for easier storage.

Lemon Cake with Lemon Filling and Lemon Butter Frosting
This is a labor intensive cake, and we made it back in May, but it is so delicious. I doubled the lemon juice and zest, because we all love lemon so much, and used fresh lemons to derive juice and zest. The second time I made it, we kicked back on the sugar in the cake itself by 1/4 cup, and it was even better because the lemon flavor wasn't overly sweet. The icing is best when you let it sit in the refrigerator about an hour before icing; this thickens it up quite a bit. Fabulous recipe!

Tangy Vegan Crockpot Corn Chowder
Mary, vegan margarine exists, although many commercial varieties do not contain milk solids or butter products, and are therefore vegan. I check labels very carefully because my breastfeeding daughter is lactose intolerant.
