Beer Butt Chicken

I must have done something wrong. I made this in the oven at 350. It's probably better on the grill, like the recipe calls for. I followed the directions exactly, but the chicken didn't have much flavor. I should have marinated overnight. I had high expectations, both my husband and I were disappointed.

Consomme Pork Chops

Overall its a good dish. I used 1 cup of white rice with 2 cups of water and 1 packet of onion soup mix. There was no need to add onion slices. I browned the chops per the recipe, adding my own blend of spices to the flour. I covered the dish with foil and baked for about 1 hour. If you don't cover with foil, it will probably dry out.

Not Your Every Day Smoked Pork Spare Ribs

I do not have a smoker or a grill, so I cooked my ribs in the oven at 325 degrees for about 2.5 hours. I used the dry rub, which was awesome! It gave the ribs an intense flavor. Instead of the mop sauce, I used Jack Daniels BBQ sauce. I coated the ribs with the sauce, front & back, several times during the last 1/2 hour of cooking. My husband loved 'em! I will make these again and again.

Ice Cream Cake

I modified the recipe a bit and it turned out wonderful! My husband really enjoyed it. I used Betty Crocker white cake with strawberry ice cream. The only problem was the layer of fresh sliced strawberries I placed between the cake and ice cream. I didn't think about what the strawberries would be like frozen. They were hard as rocks! We just ate around them. I also layered strawberry filling, and that tasted great. For the frosting I used Pastry Pride (it's like whipped cream). It all came together nicely. I'll be making this again!

Chocolate Cheesecake II

Made it...loved it!! I took the advise of so many others and didn't use as much chocolate chips in the "topping". I garnished my cheesecake with homemade whipped cream and chocolate dipped strawberries (I forgot to take a pic!). It was so delicious. I took it to work and everyone loved it. One coworker even said it was the best chocolate cheesecake her ever had! I will definitely make this again.
