Penne with Garlicky Broccolini

I didn't read other reviews before making this, but I could see when I cooked the broccoli (instead of broccolini) that the bacon grease was being absorbed. I added olive oil to both the broccoli and the finished dish and added extra cheese, but there is something missing. There needs to be more of a sauce for the pasta. It was good, but I've made carbonara before with a better recipe, so I wouldn't feel the need to make this again.

Drop Biscuits and Gravy

This was really good. The biscuits are pretty straight forward, so next time I would double the salt. I did pour pure maple syrup over them, which helped the flavor and added sweetness. The gravy was really good, but I had to add extra salt and pepper to taste. My fiancee loved this, and said it's better than the biscuits and gravy at Ihop.

Fried Rice Restaurant Style

I made this for myself for dinner last night because I was exhausted after work but craving something "bad for me" (and I was too lazy/cheap to stop for chinese food). It was pretty good, but I put too much sesame oil and had to add more soy sauce. It's good, but other than the taste of soy/sesame, there's not a complex flavor. I was out of peas, so I used corn, and also chopped some scallions. I used jasmine rice since I had it on hand. I can't wait to eat the leftovers.

Chicken Tikka Masala

I followed the recipe exactly, with the exception of using other reviewer's suggestions and not using as much salt. I used 2 tsp. of salt for the marinade, and 2 tsp. for the sauce-keep in mind that the sauce reduces, and the salt will be more concentrated as well, so next time, I'll only use 1 tsp. of salt in the sauce. Instead of grilling the chicken, I threaded the chunks onto skewers and put them under my broiler on a rack, over foil so there was little mess. The char/sear on the chicken is definitely a good thing, so I wouldn't skip that step. Overall, this was really delicious, and the level of heat was fine for me (I added more smoked paprika to the sauce, too).

Emily's Famous Hash Browns

I scaled down the recipe to make enough for just me for breakfast, and it was so easy and delicious! I used a Yukon gold potato, 2 tbs. of egg substitute, 1 tbs. flour, and salt and pepper. I fried it in a combo of butter and oil (sorry, arteries!) and it came out crispy on the outside and soft and yummy on the inside. 1 potato definitely makes enough for 2, especially if you have eggs or something with it.
