Healthy Banana Cookies

I would give these cookies only 3 stars if they weren't so darn healthy! I had no dates so I used prunes. I also substituted some peanut butter for most of the oil and added cinnamon and nutmeg. Overall they were just ok, but I liked that they used up my overripe bananas and satisfied a craving for baked goods without being full of sugar. That being said, I will probably make these again, maybe adding some nuts for crunch.

Big Soft Ginger Cookies

These really are the perfect ginger cookies. I love the taste of gingersnaps, but I prefer the softness of these cookies. I always get tons of compliments and requests to pass on this recipe. I make these every fall because the smell reminds me of Thanksgiving and Christmas.

I make these cookies every fall when the weather starts to cool. They are big and soft and just spicy enough. I always get compliments when I bake them.

These muffins are definitely healthy, but I found them quite small and dry. If I make them again I might mash a ripe banana into the batter to add some extra moisture.

Spiced Slow Cooker Applesauce

10 Stars! This was amazing! I used 3 different kinds of sweet apples, so I left out the sugar entirely. I mixed cinnamon and nutmeg into a 1/4 cup of water and threw that in right at the beginning. Woke up this morning to the smell of warm apple pie... I put a few spoonfuls over my oatmeal at breakfast and it was heaven!

Mozzarella Parmesan Chicken

I really liked this recipe, and using lower-fat versions of the soups and cheeses is a great idea. So many times I bake chicken breasts and they come out bland, but this recipe is a keeper!

I will definitely make this for lunch again! I put it in a pita pocket with baby spinach and pickles. I used yoghurt and laughing cow soft cheese instead of mayo, and added hot dijon mustard for some bite.

Awesome Slow Cooker Pot Roast

I put this on low for 8 hours, and I think it was a bit too long. The meat was falling apart (good!) but a tad dry (bad!). On the upside, it did make lots of creamy 'gravy' as promised and I will definitely make this again!

Tex-Mex Quinoa Salad

I am a huge quinoa fan, and I'm always looking for new healthy recipes. This is a great one, and I will definitely make it again! I made a few changes: using fresh tomato and jalapeno, feta cheese, parsley instead of cilantro, and adding a bit of red onion. The taste of lime juice makes this salad very refreshing.

Garbanzo Bean Chocolate Cake (Gluten Free!)

This cake is unreal! I can't believe how chocolatey and dense it is! I took it to work and no one could guess chickpeas were in it. I don't have a gluten allergy, but I was so curious about this cake I just had to make it. I will definitely make it again!! Great recipe!

Pork Chops for the Slow Cooker

I liked the taste of the sauce, but I found my boneless pork chops came out a bit dry. I had to add water and vegetable broth to the slow cooker to make sure the meat was covered, but I used reduced-sodium soy sauce so I didn't find it overly salty.

Southwestern Barley Salad

I made this salad for my lunches one week. I liked that this was nice and light, and I enjoyed the lemony dressing. I added shredded chicken for more protein and some chopped jalapenos for a bit of heat. I would give it 4 stars if it was a bit zestier, but it was a tad bland.

Alaska Salmon Bake with Pecan Crunch Coating

This was very good. The salmon was moist, and the combination of the pecans (which I toasted first) with the mustard mixture tasted great! I didn't have fresh breadcrumbs so I had to use store-bought. I think fresh would be better, because the kind you buy are almost ground into dust! I will definitely make this again!

Slow Cooker Beef Barley Soup

Very hearty and tasty stew! I loved how tender the beef was from using the slow cooker. Easy to make and freeze for more dinners another day. I used fresh thyme rather than dried, and it needed a bit of salt. I will make this again for sure!
