Chocolate Covered Cherry Cookies II

Very yummy! As many suggested, I cut the "frosting" in half and frosted the cookies after they came out of the oven... I still had leftover frosting (but I didn't spoon on, I made the zig-zag design - which was messy! but fun to do).

Braised Balsamic Chicken

I liked the idea and taste of this dish... but it needs some work. The sauce is VERY thin, but to cook it any longer would dry out the chicken, so something needs some changing. I, like many of the suggestions, cut the vinegar in half and added some chicken borth to cut down on the acidity and I think this made a nice flavor. It went well over pasta and I steamed some green beans and threw them into the mix, which was nice. As I said, I really liked the flavor but something needs to be changed about the cooking method...

Pasta with Salami and Peas

This is a great quick dish. Because some others said it was a bit greasy, we cut down on the oil/butter - for two people we only used about 2 TBL oil and no butter. We also cooked the salami ahead of time, which made it crispy, which was a nice touch. We only cooked the peas for the last 3 minutes with the pasta, otherwise I think they would have been overcooked. This is a great tasting dish that is easy and I think it would be easy to add/sub different veggies depending on what you have on hand. I think next time I will add corn.

Italian-Style Swiss Chard

I never had Swiss Chard before. This was pretty good. The Chard is a little out of season, so I am eager to try this in the summer. I did not boil it beforehand, I think that would have made it way too mushy. I might cut back a bit on the garlic next time too, but this was simple and easy to make.

Great taste, but I have to agree with most others: there is NOT enough sauce. I only used 1/2 a lb of pasta and I doubled the sauce (except for the garlic), and there was just barely enough.

Ham and Cheese Bowties

This was good - great way to use up ham. I would, however, suggest a few alterations. I would omit the garlic (it did not seem to fit with the rest of the dish), I think it would be better with a mixture of cheeses, not just colby, and finally I would suggest adding more pasta and ham (5 oz pasta and 2 oz ham for 4 is not quite enough). I also added some frozen peas and corn when putting it all in the baking dish (no need to defrost, the cooked perfectly when added frozen). I forgot the parmesean topping, and it was fine without it but I will definitely add it next time. Over all it is a very nice, comforting dish that is pretty easy to put together.

Port And Mushroom Sauce Chicken

This was good as is. I followed the recipe to a "T", except that I pounded out the breast halves, which reduced cooking time a tad. My parents loved it, my sister and I thought it was good but not amazing. This was very easy to make and tasted good so it will probably be made again in my house. I used about 10 oz of fresh mushrooms and that seemed to be a good amount. There was a little sauce/mushrooms leftover, and I know my dad already has his eye on them for later in the week!

Turkey Wild Rice Soup

This was not that great. First of all, it was a bit bland. More importantly, the directions for the cream part made a lumpy mess. I was able to still salvage it, but was left with some small clumps of flour in my soup - very unappealing. Also the bacon became mushy and chewy in the soup which was not good and I love bacon. My sister and her boyfriend liked it though, so I am still giving it 3 stars. I, too, added some veggies to give it a little more nutrition. I left out the sherry because I forgot it (was busy dealing with the clumps) so perhaps that would have helped the blandness.

Harvest Sweet Potato Soup

This was a hit with my family. I used 1lb of sweet potatoes (2 large instead of the 3 medium) and that seemed to work well with the measurements of the rest of the ingredients. Make sure you get the "threads" out of the celery because they don't blend (I missed some and had a few strings in my soup, but no big deal). I used an immersion blender instead of a food processor and saved the reheating step. I would suggest serving with cinnamon to sprinkle/shake on top. Thanks for the recipe, it was a good one!!

Easy Garden Green Beans

Great! Reduced the vinegar a bit (really not that much) as per other recommendations. Everyone liked it. I would suggest covering the green beans as you let them sit for 10 min, cause ours were a little cold (which we don't mind, so it wasn't a problem... just a heads up). I also used minced garlic instead of sliced, so no need to take it out at the end. Will definitely make this again!! And will probably try it on other veggies. Also, I dipped my chicken in the extra sauce, that was good too :o)

Mardi Gras Beef

Very good VERY FAST dish. Perhaps we had a thiner cut of meat (they didn't have sirloin when I went to pick it up). Followed the recipe exactly, except maybe a bit less cornstarch because the stewed tomato juice was already very thick. Great when you need dinner in a hurry especially if you make it with couscous or 10 min rice or any other quick side dish.

Parmesan Pork Tenderloin

Excellent. I didn't do the veggies at the end, but I followed the pork part of the recipe to a T (well, I eyeballed the S & P so may have added less and I used Italian Seasoned Breadcrumbs) and it came out perfectly. It was a hit. Will definitely make pork this way again, and might try the veggies another time!!

Shrimp and Feta Cheese Pasta

Delicious! I just realized that I forgot to add the basil and oregano... oops... but it was still good without it! As per most of the recommendations I added about 1/2 c chicken broth so there would be more sauce. I used a bit less pasta then called for and still thought there could be a bit more sauce. Will have to play around with the amount of liquid to get it right.. but it is really good!!

Cheesy Ranch Potato Bake

Delicious! As per the other reviewers - I omitted the butter. I just tossed the chopped potatoes with a bit of olive oil and the seasonings it calls for. Thanks for this easy, yummy side dish!
