Baked Rigatoni with Italian Sausage and Fennel
WOW!! This was so wonderful! I used hot Italian turkey sausage, an Italian blend of shredded cheese, 1/8 of a HUGE onion instead of half, and didn't have any roasted red pepper, but it still turned out so great! I bought some fennel from the farmer's market and was trying to find a recipe to use it in that my husband would still eat - and he did, second helpings and leftovers! After reading the other reviews, I made sure to slice the fennel as thinly as I could, and it was still a little crunchy, but it didn't detract from the meal at all. I have tried a lot of recipes from this site, but this is the first that turned out like it was supposed to on my first try! The flavor was just wonderful, presentation was beautiful, not too dry, and what flavor! My 18 month old liked it, too!

Easy Polenta with Tomato Sauce
This was a very easy recipe - I followed it exactly, and it turned out really well! I am new to polenta (I had only used it to make some little pancake things for my daughter), so I wanted to try something easy with it that would be familiar enough for my slightly picky husband to like :o) This seemed to fit the bill, and I really liked it. My husband was so-so as well as my daughter, but I am craving it again! My polenta did turn out really creamy, like some other people said, not very solid. We just mixed everything together and ate "polenta spaghetti sauce soup". The next day, though, I ate leftovers, and the time in the fridge had firmed the remaining polenta a little more. It tasted great that way, too. I would suggest anyone to try it!

Zucchini Alfredo
This recipe was great! I loved using the cream cheese for the sauce, didn't realize you could do that until I made this! I added a little (too much!) red pepper at the suggestion of one of the reviewers. That really bumped up the flavor, I just won't use as much next time! You really couldn't taste the zucchini, but a great way to mix a veggie into dinner! Thanks!
