Zucchini Brownies

I decreased the sugar to 1 1/4 cup. The brownies were WAY too sweet! (makes me stick to my stomach) Maybe I should omit the icing or use a lot less icing. If I try it again, I would decrease the sugar even more and use applesauce instead of the oil.

Pecan-Oatmeal Pancakes

My family loved it. We portioned off some of the batter and did not add the pecans for my 15 month old. She loved it, and couldn't get enough.

Mom's Cucumber Salad

Excellent, as is. Better with the cucumbers peeled (a lot of the pictures have the cumcumber peel on). This is the best recipe I have ever tasted with cucumbers involved.

Baingan Bharta (Eggplant Curry)

Excellent! Just like going to a restaurant. I did a few modifications: I cut the eggplant in half and placed it cut side down on greased aluminum foil to bake. Instead of Garlic ginger paste I did 3 cloves of garlic and 1 tablespoon of ginger. I used 1 tsp of powdered cumin instead of seeds. I used the whole 6 oz of plain nonfat yougurt (this is a little more than 1/2 cup). I increased to two tomatoes (because many reviewers said it was burning to the pan and not juicy enough. I used 1/2 a jalepano pepper instead of the whole pepper and is was plenty spicy. Wonderful recipe!

Definitely addictive. I used 2 cans of pinto beans and 1 can of black beans. As many others mentioned, I used less water (1.5 cups).

Amazing! I used catfish (because it was on sale) and it was great! I baked the fish for 20 minutes at 400 degrees instead of frying it.

Low Sugar Strawberry Rhubarb Crunch

We loved it! Realtively healthy and low on sugar. Modification: I did 2 cups chopped rhubarb (that was all I had) and 2 cups of strawberries and it was perfect.

Banana Blueberry Muffins

These were wonderful! I increased the cinnamon to 1 tsp, did 2 eggs (instead of egg whites), and instead of blueberries I added crasins. When you pour the batter into the muffin tin the batter looks very think and kind of dry, but when the come out of the oven they are great! I love this recipe because it is relatively healthy with whole wheat flour, only 1/3 cup of brown sugar and no oil, butter or honey.
