Italian Summer Squash Polenta Bake
Being a good Southern girl, I just used yesterday's grits that were cooled and solidified instead of expensive "polenta". I pressed them into the dish and skipped the frying. Make sure you cook your grits extra thick! Made this another time with leftover cheese grits-DELICIOUS!

Bombay Chicken and Rice
Unbelievably easy to make! Great recipe- few ingreds, very little effort, great flavor. This will become a new staple at my house! Prep time is really more like 5 mins and waiting on the oven to heat. I used a trail mix with banana chips and nuts I had around. Didn't bother removing the nuts, and it turned out to be an excellent addition. I salt and peppered the chicken before brushing heavily with the butter mixture. Chicken needs a heavy coating of the butter/spice mixture, make extra if needed.

Shrimp Brochette
Delicious! I found that it was easier to wrap the shrimp using raw bacon. To be sure the bacon cooked nicely I alternately raised and lowered the lid on my propane grill to maintain a small flame. I used a small sliver of cheese inside, then topped the shrimp with a little more at the end.
