Acorn Squash
Good basic recipe for perfectly cooked acorn squash.

To Die For Blueberry Muffins
I made these omitting the streusal topping and they were delicious, I can only imagine how good they would be WITH the topping! Light and fluffy with blueberries throughout. I used frozen blueberries instead of fresh and I used a mini muffin pan. Recipe made 24 perfect mini muffins with big tops.

Caramel Apple Pork Chops
This was relatively easy and really good. The perfect balance of salty and sweet! My husband and 2 year old both ate it all up. I used slightly thicker chops and added some powdered ginger to the sugar/cinnamon/nutmeg/salt/pepper. Serving with roasted acorn squash made a really hearty fall meal.
