Oatmeal Raisin Cookies IV

These were delicious! I didn't soak the raisins for the full hour, but they turned out fine. I made no other changes. (Oh, I added nutmeg. Next time I'm going to try it with oil instead of butter.)

Turkey Breakfast Sausage

Absolutely wonderful. I was amazed at how much this tasted like pork sausage! The only thing I did differently was to add a 1/2 tsp. sugar, a shake of rosemary, and some crushed red pepper flakes. I doubled the amount, but I wish now that I had tripled it! I saved most of it for my Thanksgiving cornbread and sausage stuffing. A keeper for sure!

The Best Rolled Sugar Cookies

Cranberry Nut Bread I

Best Ever Pie Crust

Delicious. It was a little too fatty for me, so I'm going to try cutting back next time. I used oil to make it healthier. It worked perfectly. Considering that this is my first pie crust ever, I think it went wonderfully!

All-Around Good Smoothie

Great recipe. It probably would have been better had I just used one banana, but since I didn't have any yogurt, that seemed to work. If you really like bananas, then this would probably be better, but I'm not a big fan of them. I also added a splash of orange juice and substituted the flax seed for flax seed oil. Overall, delicious!

Mango-Pineapple Chutney

Delicious! Like every recipe, I made some changes to fit my family. You can do pretty much whatever, but for ease, I'd use a can of pineapple tidbits - soooo much easier and just as tasty. It has just enough zing to it.

Gumbo Style Chicken Creole

I would give this ten stars if I could! We all LOVED it! I did do some things differently, however. I made the can of tomatoes with green chili peppers 10 oz., used an 8 oz. thing of fresh mushrooms (cook them with the onions), added a banana pepper to the onions and mushrooms along with a green chili pepper. I also subbed molasses for the white sugar. Anyway, despite my changes, we loved it. It was very filling, too.

Mrs. Sigg's Fresh Pumpkin Pie

This was literally the best pumpkin pie I have ever had. I made a few changes, though. Instead of the evaporated milk I used fat-free condensed and only a half cup of sugar. I didn't use eggs, and I cooked it for about 30 min. and didn't refrigerate it. Still gets five stars!

Blueberry Sauce

I forgot to put in the cinnamon and I chose not to put in the almond extract. :D It was still delicious! I had it over fat free vanilla frozen yogurt. Next time I'm going to try pancakes...yum!

Orange Spice Muffins

This was a great muffin recipe. It made 12 mini muffins and 6 regular muffins. I made some changes to fit our way of eating-instead of butter I used oil (it turned out great; you'd never know the difference), I made it 3/4 cup oj instead of milk and 1 cup milk (the batter seemed awfully dry), and I added a tsp. of cinnamon to the batter. Also, if you don't have buttermilk baking mix, use 3 cups flour, a Tbsp. baking powder, and 1/2 tsp. salt; it worked perfectly. I left the mincemeat out (I didn't have any on hand). Overall, though, it was a great recipe and I can't wait to try it exactly! I would definitely recommend this recipe to anyone.

Crunchy Berry Parfaits

These were delicious! I didn't have the fresh berries, so I microwaved (to thaw) about 2/3 cup of frozen strawberries for 1 minute on high. I mixed those with a freshly cut peach. P.S. I made my own granola by sprinkling oil on it, drizzling honey on it, and then toasting it in a toaster oven for 3 minutes. Stir about once every minute-otherwise it will burn. :-)

Very Simple Spelt Bread

This was only okay. It wasn't fluffy, which I had hoped for. I don't remember if I didn't put salt in or not, but it was not salty enough. I doubt I'll make this again. Sorry, but it wasn't to my taste!

Mom's Cucumbers

I used about 1/8 cup of sugar-1/4 cup would've been too much. I also tried it with apple cider vinegar instead of distilled white vinegar. It was very refreshing, but not great. I will make this again with some more changes. P.S. You don't need to let the cucumbers stand thirty minutes.

Garden Pasta Salad

This was very good. I made a couple of changes: I didn't have celery or green bell pepper, so I left those out. I thought the dressing was overkill so I used about 4 oz. instead and I didn't have the Red Gold tomatoes with all the seasonings so I substituted 3 fresh basil leaves and about a tbsp. fresh parsley. The recipe is very forgiving, so make it any way you want! One last thing, if I put in the carrots in at all next time, I'll be sure to shred them. Sorry if I sound like I'm complaining. I'm just saying what I did differently!

Basic Corn Muffins

Delicious! Try it with buttermilk; I think it tastes better. For those of you who don't like sweet cornbread, you should try using about a tsp. of honey instead. I used 3/4 cup all-purpose flour and 1 1/4 cups cornmeal to make it healthier.

Whole Grain Waffles

I left the the flax seed meal out and I added a Tbsp. more of sugar. I didn't use whole wheat pastry flour-just whole wheat flour. Delicious!
