I moved back to NY about 2 years ago, Lived in Washington State and got real cozy with NW cusine. Always looking for new recipes from that region as well as good southern recipes (comfort foods. The boyfriend loves meat and potatoes trying to find recipes that are like that with a little twist.

Caramel Apple Pork Chops
This is a great dish! My boyfriend and both loved it!! and he is a fussy eater. I did tweak it just a bit. I substituted the butter for I can't believe its not butter to reduce fat, I also did not have any nutmeg so doubled the cinnamon and used a 1/2 tsp more of the light brown sugar, i also used an additional 1 1/2 tbls of olive oil rather then the oil suggested. i paired this with homemade applesauce and butternut squash..awesome fall/ winter dinner.

Easy Baked Tilapia
This came out very tasty. I did alter it a bit. I added 1tsp butter and 1 1/2 tsp olive oil. I used 1/4 tsp garlic powder and 1/4 tsp minced garlic. 1/2 tsp old bay seasoning and scapped the lemon. was very good

Cabbage and Pasta
This was very tasty. I did make some alterations as suggested by others. I used a package of pre cut coleslaw to save on time, a half cup of margarine, 2 tablespoons of garlic and I added a touch of lemon pepper spice to liven it up a bit. I also used fine cut egg noddles and really thought it worked out great with this dish. It is definately a quick dish to make in the future. May try some Low fat Kielbasa sometime with this...
