Vegan Chocolate Cake
Was thrilled to find this cake! I have a vegan daughter and her birthday is TODAY I found this last night and made it for her birthday today. WONDERFUL cake - moist and delicious. As good or better than non vegan cakes, I think. Next time I may just add chocolate chips too. Ghirardelli semi sweet chips are vegan. I used a heaping 1/3 cup of cocoa cause I wanted it chocolate-y. I cut the baking soda to 3/4 tsp and used 1/2 c water and 1/2 c soy milk. I frosted it with storebought white icing - many brands are vegan, just read the labels to be sure. GREAT and I will be making this again, soon.
