Addictive Sweet Potato Burritos

Yum. I never would have mixed sweet potatoes with mexican flavors with mustard with soy sauce, but it works well here. Putting it on the monthly rotation.

Lime Chicken Soft Tacos

YUMMY! Used cumin instead of oregano, juice of whole lime, and a splash of tequila. Adding it to our dinner rotation.

Thai Red Chicken Curry

I give it three stars as written. Next time, I will double the curry powder. Salt and pepper throughout, and add fish sauce. Good base, but the flavors aren't deep enough.

I've made this twice now, and it is a great base recipe. The first time, I poured off almost all the liquid before cooking, and it turned out great. The second time, I used only 6 eggs, and increased the half & half to 2 cups, but did not include the milk. I still poured off excess liquid before cooking, and it turned out wonderful as well.
