I have been trying to find something to make with beets, because I got them through my CSA and I am not a huge fan. This recipe was great! The goat cheese and nuts was a perfect off set for the beets. I didn't have frozen orange juice, so squeeze fresh oj juice and added alittle of the maple syrup to make it alittle sweeter. Amazingly my husband also liked it.

Creamy Black Bean Dip

I read the one review and used fresh garlic and onion instead of the powder. I also reduced the balsamic vingear by 1 T and the ketchup also. I added a can of garbanza beans and green chiles to the recipes. I then topped it off with cheese, black olives, onions, salsa and alittle sour cream. Tasted much better!
