Hockey Pucks

My grandfather started making these one Christmas for the family, and I have been the one to carry on the tradition! We make these with chocolate almond bark and I probably eat an entire batch by myself over the season...SO DELICIOUS!!

After reboiling, these completely fell apart and I was left with potato mush. I may try this again, but I don't know for sure. It was quite discouraging, might try finding a new recipe.

Jam Filled Butter Cookies

These came out great! I've never made a shortbread-type cookie, and this was a great introduction. I made both strawberry (jam) and blueberry (preserves w/splenda) middles. I highly suggest you use preserves when making these - the flavor is so much better!

Party Potatoes

I love these potatoes!!!! I used cream of mushroom soup this time, but I might try cheddar soup next time since the people I'm serving don't really care for mushrooms! Isn't is great when you find these things out after you cook for them??

Chocolate Trifle

This was very good! I have a family of three so I made two smaller dishes - one is frozen. I did not use a 3.9 pudding mix, instead I went for the larger size of 5 oz. just to give it more chocolate flavoring. The brownies I baked and then sent directly into the fridge and they were nice and cakey for us! I will definately be making this again!

Grandmother's Pork Chop Dinner

This was a good "starter" recipe, but it definately needs something more. My family and I both agreed that making gravy for it would have been better, and next time we will do without the bacon cooked into the whole dish and actually crisp it and then put it on top instead (we do not like bacon if it's not crispy!). The only variations that I made while creating this dish were I used turkey bacon and onion powder (due to texture preferences).

Sauteed Apples

These were really good. The apples came out perfectly cooked and were served with "Grandmother's Pork Chop Dinner" from this site. A great combo as the sweet balanced out the savory.

Coconut Macaroons II

These were absolutely delicious. I tried to make them right after I had mixed them and had a bit of a mess so I stuck them in the fridge for a few minutes and it made it super easy to get them into little balls.

Honey-Glazed Chicken

I cut this down to make four chicken breasts out of it. I marinated them for 36 hours and they were so tender you merely had to touch them with a fork and they would cut open for you. Oh...SO GOOD!!!

Easy Chocolate Mousse

I make a thick version of this using less milk so it's more "mousse" like and love it. I use it to fill cupcakes and also do other varieties on the pudding. I have made this with vanilla and I tried cheesecake pudding with 3/4c. milk and 1/4c. caramel Bailey's to fill chocolate cupcakes - delicious!

Caramel Apple Cheesecake

The funniest thing about this is that my sister-in-law made this cheesecake and I never got the recipe from her (it was a busy day!), so I went home and made it myself...it's this exact recipe... This cheesecake is THE BEST autumn treat!!!!! I can't wait for fall in a couple of months just so I can make it for everyone again!

Sweet and Sour Chicken I

This tasted every bit the same as one of my favorite restaurants recipe! The only things that I changed were adding a little bit of pureed pineapple to the batter (only about a tablespoon worth) and putting a chopped green pepper in the sauce. My family thought this was well worth the prep/cook time to have this dish! Thanks!

Chip Chicken Lollipops

These were really delicious. Because my family was super hungry when I made them, I didn't bake them. I instead pan fried them up really fast as little chicken nuggets. They were on the table in about 15 minutes and my fam. loved them. Thank you for this super easy recipe! (Oh, I used Light Ruffles.)

Chocolate Crinkles II

Different things that I did were: using 1 tsp. of baking soda, Splenda baking sugar instead of regular sugar in the dough, and had them in the fridge for 24 hours before baking. They turned out great. I wasn't expecting them to taste like a brownie, but they did. The sugar gave them a slight crunch on the outside and they were warm and chewy on the inside. Delicious!

Tacos in Pasta Shells

This recipe is really simple and really delicious! I used 1lb. ground turkey instead of beef, no salt, paprika instead of chili powder, and omitted the totilla chips. I also added a little bit of the sour cream to the cream cheese and then mixed it in with the turkey because it was a little dry looking the first time I made it with just cream cheese.
