Slow Cooker Pulled Pork

This recipe was a BIG hit at our tailgate this past Friday! The beauty of this receipe is that you can make as much as you like! I use a 4lb pork shoulder roast and since it was so well cooked, it was easy to pull the fat off before placing it back in the slow cooker with the BQ sauce. I used Sweet Baby Ray's sauce and made the Sweet Restaurant slaw to put on the sandwiches as one viewer suggested. All gone! The only downfall that night was we lost the game! Thank you for sharing a GREAT tailgate recipe. You can't go wrong!

Spicy Bean Salsa

This salsa is the bomb! I followed the suggestions of using fresh tomatoes versus canned, clove of garlic instead of garlic salt, and a squeeze of fresh lemon, olive oil and balsamic vinegar versus italian dressing. I have made this twice and both times it disappeared by the next day when it sat overnight. My brother even makes toasted sandwiches with just the salsa! Great on a baked potatoe or cooked chicken breast too. One other thing I want to mention that perhaps may be helpful to someone is use vacuum packed corn versus a can of corn you have to drain, it is the equivalent to a 15 ounce can and the corn is not soggy!
