Sweet Corn Cake

Big hit for cinqo de mayo! Reminded me of El Torito side dish. Used a can of creamed corn instead of frozen. Perfect consistency, will make again since I had to buy a big bag of masa harina.

Ramen Noodle Salad

this was tasty. used 3 packs of seasoning and it was just right. Used green onion instead of red. Liked the crunch. Is a do-over.

Halibut Provencale

this was super easy but I overcooked the fish, a little dry. Omitted the bread topping as the others suggested. Liked the flavors but needed a little more flavor, maybe salt.

Actually used risotto for the dish and since I forgot mozzarella at the store substituted parmesan. In the interest of time decided to serve as risotto and not bake it, it was wonderful and a do over.

Artichoke Bruschetta

these were a big hit at a recent dinner party. A tad salty for my taste though, might have been the marinated artichoke hearts, might use plain artichokes next time and see if it makes a difference.

Greek Spaghetti II

This was pretty good. I added garlic as was suggested in another post and also added shrimp. I topped it with goat cheese. Yum! Hubby liked it and asked for seconds, a true sign of his sincerity.

Roasted Garlic Mashed Potatoes

Cream Cheese Penguins

Did as others suggested and added the ranch dip to the cream cheese which added flavor. These were a hoot to make. Did them with my niece over Thanksgiving holiday.

Pumpkin Cheesecake II

This turned out very well. Mine was a little lumpy so make sure to scrape the sides of the bowl as you're mixing. Wish it had just a little more pumpkin flavor. Nonetheless it was a hit.

Oregon Salmon Patties

These were better than I was expecting, my husband loved them. He's on a salmon kick. Wasn't prepared for how gross canned salmon is. Next time I'll for a deboned version---blech!!!

Lacy Oatmeal Cookies

this is one of my favorite cookies, i switch the vanilla extract for orange or almond for a change of pace. Huge find this year is the Reynolds Quick Release Foil. The cookies slid right off! I couldn't believe it as I have had to scrape cookies off the foil in the past. Will do these again and again.

Easiest BBQ Pork Chops

My husband really wanted bbq porkchops so I too did the 50/50 ketchup/bbq sauce. He said they were the best I ever made, usually I dry them out, not this time. Made sure they were fully covered with liquid. It's a do-over.
