Annie's Fruit Salsa and Cinnamon Chips
Wow, this was wonderful. The cinnamon chips were great on their own. It makes a huge recipe, so I half it and use the left overs over ice cream with a couple cinnamon chips. The fruit is also good for breakfast.

Tacos in Pasta Shells
I brought this for a family reunion, and it was a big hit. I had bowls of cheese, diced tomatoes, shredded lettuce, black olives, cheese, cilantro, sour cream and salsa around the dish. It was fabulous and very filling. Leftovers freeze well and are a snap to heat up in the microwave, with a little water and salsa added.

Low Sugar Strawberry Rhubarb Crunch
Wonderful and whips up in no time at all. I wast very, very tart - just the way we like it. Serve with Ice cream. I used 2 Tbsp. agave in place of the honey, added 2 Tbsp. of cornstarch, and used the Splenda brown sugar mix in the topping. Next time I wouldn't change a thing. I will make this often.
