Oaxacan Tacos
These are truly delicioso! I am blessed to have a grocery store that makes fresh corn tortillas everyday, so it really added to the authenticity of them. My husband's favorite way to heat the tortillas is to omit the pan (and the oil) and place the tortilla directly on the burner. (If you do this be careful to have a low flame and use a tongs to turn the tortilla).My husband and I eat them exactly as stated in the recipe, but for the kids I make a ‘taco bar’ and have shredded lettuce, sour cream, tomato, and cheese for them to add. Everyone leaves the table with happy and full tummies!

Vanilla Crepes
Heavenly! I used 3 whole eggs and the batter was perfect! I think it would have been too thick with only egg yolks. (Everything else I followed exactly.) My favorite way to prepare these is to smother jam on them, roll 'em up, drizzle on some melted butter, and sprinkle powdered sugar on top! So delicious!!

Blueberry Cream Muffins
Yum,yum,yummy! I used a dark pan, so I lowered the oven temp to 350 and baked for about 20 minutes. I used about 2 1/2 cups of blueberries and they came out great, so soft and moist. It made 24 full size muffins and about 15 mini muffins. I am going to freeze them in individual packets, so on rushed mornings I can pull one out, throw it in the microwave an enjoy. This will be my blueberry muffin recipe from now on!!
