Tiramisu Layer Cake
YUM!!! I've made this cake twice now. The first time was for my sister's birthday and everyone that tried it loved it. I couldn't find marscapone cheese anywhere in my town so just used cream cheese and it was great. The second time I made it was with my sister who wanted to make it for someone else's birthday. I found a way to make marscapone cheese with cream cheese and powdered sugar so I tried that. This cake takes a while to make with all the layers and cooling the cake but it's not that hard and it tastes so great. I will definitely be making this again. :)

Easy OREO Truffles
These were SOOOO easy to make. The part that took the longest was rolling the truffles into balls. But it was worth it. I definitely recomend chilling the truffle balls before dipping them in the chocolate. I didn't have any problems with them breaking. I made a second or third batch with PB oreos and Mint oreos. The PB ones I also substituted about 1/3 of the cream cheese with peanut buttter and added a little but of peanut butter to the melted chocolate. I sprinkled chopped peanuts on the top which looked nice. The mint ones I added a little peppermint extract to the truffle and to the chocolate and crushed candy canes to sprinkle on top. Soo yummy and soo easy. I will definitely make these again. :)

Layered Chicken and Black Bean Enchilada Casserole
This was so good. I made it exactly as the recipe said and didn't have any sogginess. Next time I'm going to make a double batch so we can have leftovers. My 9 year old son was gobbling this up so fast so that he could have seconds before anyone else ate them all.
