Red River Beef Stroganoff

Doubled the broth, incresed the spices to match and added extra fresh mushrooms, but this is the best stroganoff recipe. It will be the only one I use from here on out. It was great!

Daddy's Whisker Soup

Used 2 cups of extra sharp chedder and cooked the onions with couple strips of bacon cut up. Tasted great, family loved it and no left overs. A hit!

Sea Bass Cuban Style

I made this with tilapia filets because Sea Bass is expensive! It tasted great but alas my kids are no much for fish dishes unless it is fried. I think the next time I will try it with boneless chick brests instead. Love the flavor or the sauce over rice.

Best Steak Marinade in Existence

World's Best Potato Salad

I have made this twice and it was a hit both times. I read the other reviews and reduce the sugar to a couple of tablespoons because I like tangy potato salad, but you can adjust it to your own taste. Also I thought it looked kind of plain so I added 1/2 each of green, red, and yellow or orange bell peppers. I chopped them finely and save a small amount back (about 1.5 tablespoons) to sprinkle over the top for garnish with the hard boiled egg slices and it looked and tasted great. This is now my first and in almost all cases only (with the changes) potato salad recipe. Thanks KL for sharing.

Chili-Lime Chicken Kabobs

I made this with pork instead of chicken and it was great. Based on other reviews I tripled the recipe so I would have some marinate left over to put out on the table so I could add extra if anyone wanted. Will make this again it went well with sliced mango and served with jasmine rice as a side.

Creamy Macaroni and Cheese

I agree with some of the other posters, the dijon is too much for this recipe. Next time I will use dry mustard or Nance's Sharp and Creamy mustard. I will reduce the amount to 1 tablespoon. I ended up using heavy cream w/ milk because that is what I had on hand and ended up adding 3/4 cup of mozzarella because I needed to use it up. Add a bit of cayenne pepper and worceshire sauce to give it a little kick. It made a very creamy mac and cheese that will (with minor changes) be made again and again.

Sweet Dinner Rolls

I don't have a bread maker so I had to modify process to work around that fact. I read other reviews and followed their advice. Been a long time since I worked with dry yeast but the rolls still came out fantastic! I will diffenately make again. Kids demolished a pan of 32 rolls.

Vietnamese Style Vegetarian Curry Soup

I made this into chicken curry soup because I had a couple of chicken breast to use up. I just added the chicken when I was sauteing the onions and I subbed chicken stock for vegetable stock. It has a great curry flavor. I will make two changes for next time. I will add the red and green peppers later in the process, probably just before the potatoes and I will cut the stock and water in half to make it thicker. I like soups like this closer to the consistancy of stew than soup, but that is just my preference. This soup was awesome with some cooked jasmine rice add in to the bowl.

Fajita Marinade I

It might have helped if I could have grilled the meat but rain prevented grilling, so I broiled it in the oven. I like my fajitas a little spicier as well. I marinated the meat for a full 24 hours but it was just not as flavorful as I had hoped. It was a good home made fajita but I been searching for that restuarant quality recipe.

Guacamole

My wife said this was the best cuacamole she had ever had. Made some minor changes, left out the tomatoes because kids will not eat them in their guacamole. Added 1/4 teaspoon white pepper and cut the cilantro in half. It was the hit of Mexican dinner night at our house.

Garlic Chicken Stir Fry

I doubled the recipe and added 7 minced Thai peppers. I used carrots and broccoli because that is what I had around. I reduced the sugar just a tad and added one Tablespoon of fish sauce to the corn starch mixture. It was excelent resturant quality.

Beef Pho

Great Pho. I made it per recipe and it was very good. I will make two changes to adjust to my own taste. I would cut the star anise pods by half and only add 1.5 gallons of water. I had to simmer it an additional 2-3 hours to reduce the volume to up the beef flavor. I believe it will be resturant quality with these adjustments. I would serve it to dinner guest any time.

The Best Bean and Ham Soup

Wait for it! This soup does not taste "right" to me unitl it has been cooking about 7 hours. After that it just gets better and better. I like to substitute about 1/2 cup fresh parsley for the dried. I added 2 med potatoes a couple of times and worked great. Kids love it and never a drop goes to waste.
