Fresh Cucumber Salad
Thanks for a simple and refreshing salad! Now I know what to do with cucumbers whenever they are "coming out of my ears". I ate it right after fixing it and it was good even before chilling. I think I will be eating it all day long! I love dill and am happy to find recipes that include it. This will be made often by me. Thanks for submitting this one!

Corrigan's Minestrone
Great tasting soup! I followed the instructions to the letter except for a couple additions. I added 1 can of rinsed garbanzo beans, about 12 ounces of canned chopped tomatoes that I wanted to use up and also added additional vegetable broth to thin it down. I did pre-cook the pasta (as others suggested) before adding it. My soup took substantially longer to cook than the recipe said but I just kept cooking until veggies were tender, no problem. This is VERY good tasting and nutritious and even my meat eating son enjoyed it. I will definitely keep this recipe and be making it again. Thanks much for sharing a good one!

Honey Nut Granola
EASY granola recipe! This is delicious and so simple. I had all the ingredients on hand unlike many other recipes. I made it according to directions but with a couple substitutions. I do not like sunflower seeds so I used almonds and walnuts, 1 & 1/2 cups total and 1 cup of dried cherries added during the last half of baking. I like the versatility of adding whatever nuts and or fruits you like or have on hand. I think I will add coconut and pecans next time. I will make this again and again. I normally mix up my own muesli concoction for breakfast with plain yogurt since commercial granola prices have gone through the roof. This will be a nice change from that. Great recipe. Thanks!
