Enchiladas Suisas

Yum! This was very good. I was concerned that it wouldn't turn out, but it totally did. I used 2 cans of chopped green chilis and 2 cups of chicken broth for the sauce. DP said he would have liked a little more spice, but we wanted the 1-year old to be able to eat this as well. Otherwise, we could have added some hotter chilis. I will probably increase green sauce by 1/2 next time, so there would be some extra for serving at the table. After reading other reviews, I opted not to fry the tortillas in oil. I did dip them in simmering heavy cream, and they did not fall apart at all. I saved a step and calories! I also don't think it's necessary to add the onions, tomatoes or olives at the end. I don't think I will next time. We enjoyed this one!

Creamy Macaroni and Cheese

This was pretty yummy. My BF and I both enjoyed it. He said it was "like Swanson's, only better." My one year old wouldn't eat it, but since he won't eat anything that shouldn't negatively reflect on the recipe. I halved the recipe and still had a ton leftover. I wasn't too sure how it would reheat in the microwave, but I poured a little milk on it before reheating, and then stirred it up good once it was hot. It was delicious the second time around and not at all dried out. I also used dry mustard powder instead of the dijon. I will make again, although only occasionally as it is a little sinful.

Autumn Cheesecake

This was okay, but not my favorite cheesecake. Maybe I just don't like the apple/cheesecake combo. The men really liked it, but I noticed most of the women only ate half of what was on their plate. I was very worried about the apples being tough, but I sliced them very thin as other reviewers suggested, and they were fine.

Grilled Sausage with Potatoes and Green Beans

This is pretty good, and easy. I just add whatever veggies I have on hand, plus minced garlic. I also add cajun seasoning for a little kick, a couple dashes Worcestershire sauce, and a little beer in each packet. I use only olive oil, instead of the butter and vegetable oil. It's perfect for camping!

Fresh Asparagus and Chicken Casserole

This was just okay. A good way to clean out the fridge, but I'm not keeping this in my permanent file. I did add a splash of white wine, minced garlic, and a can of mushrooms to liven it up a little.

Five Star Cheesecake

I chose this cheesecake recipe because it only calls for 3 pkgs. cream cheese, which I preferred over some of the other recipes that called for 4 or 5! pkgs. I wanted a classic cheesecake, and this fits the bill. Texture is very creamy. I did use another recipe for the crust (1 1/2 C graham cracker crumbs, 1/3 C melted butter, 1/4 C sugar - bake for 10 minutes). I've made other cheesecakes in the past, and have had problems with cracking or sinking in the middle. This one looks perfect, due to the water bath. I did have trouble with water leaking into the springform pan (I ended up making the crust twice because the first one was ruined), but will experiment a bit more with the technique to get it just right. I read online to use a plastic turkey oven bag instead of the foil. No leaks! I served the cheesecake with a seedless raspberry sauce I made from frozen berries and sugar. This made an excellent birthday cake for my BF.

Slow Cooker Taco Soup

This taco soup is awesome! We eat this pretty regularly. So easy, good for you, inexpensive...what else can you ask for? I use ground turkey when I make this, and even BF who (always) prefers beef loves it. I've made in the crock pot and also on top of the stove - great both ways, but don't use as much water as it calls for. I find if I cook it on top of the stove it thickens up a little with time. Love the addition of chips, cheese and sour cream.

Chicken Wild Rice Soup I

This is one of my favorite soups. During the winter months I make soup every Sunday, and this is in regular rotation. My boyfriend prefers plain, honest food, and I would rather eat something with a little more pizazz and sophistication. This recipe fits the bill on both counts. I love the addition of the curry powder.

Heavenly Chipped Chocolate and Hazelnut Cheesecake

I have made this cheesecake several times, always to rave reviews. It's the best cheesecake I believe I've ever had. I initially tried the recipe so I could use up a bottle of Frangelico that I had. I always use chocolate grahams for the crust, and I think this makes it better. The hazelnuts are a pain to work with, but oh so good. I don't think I used quite as many as I was supposed to last time, and I just put the chocolate topping on and then sprinkled with chopped nuts to make it a little easier. Magnifique!

Avocado and Tomato Salad

This was pretty tasty. I've made this a couple of times when I just happen to have all ingredients on hand, and need to use the produce. I probably won't go out of my way to make this again, but it's perfect if you have ripe avocados and tomatoes.

Brooke's Best Bombshell Brownies

I've been looking for my go-to brownie recipe, and this is it! Very rich, very chocolatey. They have perfect brownie texture, with flaky crust on the top, and fudgy interior. They're super easy to make, and I almost always have the ingredients on hand. I've made these a couple of times for brownies a la mode, and my family just raves about them. Yum!

Smothered Filet Mignon

Oh, this was wonderful. My boyfriend always orders steak medallions gorgonzola at our favorite fancy restaurant, and this was almost just like that. I made this for Christmas Eve dinner, and everyone thought it was divine.

David's Yellow Cake

I made this cake for my son's first birthday party. It was delicious! Very moist and great flavor. Just what I wanted - I love yellow cake with a rich, chocolate icing. I was concerned at first because the batter was very thick, and I had to cook it an extra 5 or 10 minutes, but it turned out great. This one is going in the permanent file.

Honey Mustard Dream Delight Pork Chops

Yum. These have become a summer standard at our house. I don't put quite as much spice on the chops as the recipe calls for. In fact, I just mix up a batch of the rub and keep it in jar in my pantry so I always have some on hand. Also, I just use whatever mustards I have on hand, but the honey and horseradish are a must.

Neat Sloppy Joes

Even though I'm not really a fan of sloppy joes, these are pretty good. I've made these many times, but yesterday I used 1 cup of chopped yellow onion instead of the two different kinds of onions, and I used an 8oz. can of tomato sauce instead of the soup. I couldn't tell the difference - they were still great. I cook them way down so there's no crunch to the veggies. I usually make a double batch and freeze half for an easy dinner on the run.

Cheesy Vegetable Soup I

This is a really good, really easy recipe. I cut the butter in half, and just throw in whatever veggies I have on hand. It's great for cleaning out the fridge. Yummy cold weather comfort food.
