Black Bean Hummus

This is so yummy! I found it a little too thin for my taste, so next time I would leave out the 2 TBSP of bean liquid. The only other things I changed were that I doubled the cayenne because I like spicy food and I added a little extra lemon juice. Thanks for a great recipe!

Thai Peanut Chicken

I really liked the sauce. I almost doubled the amount of cayenne because my fiance and I like our Thai pretty spicy. Super easy and really good! Be sure to make extra sauce!!

Spicy Yogurt Dressing

I like cumin. I like yogurt. I liked this. I used it on broccoli slaw. It was pretty good. I gave it 4 stars because if you don't like cumin or yogurt, you will not like it.

Goat Cheese Salmon

Goat cheese and salmon, who would have guessed? This was delicious! I did make a LOT of changes to make it more to my taste and healthier. First, I used plain goat cheese. I also chopped some fresh spinach and added that with the goat cheese as part of the stuffing. I don't like mayo, and I was a little skeptical about the mustard/goat cheese combo, so I made my own sauce by whisking together juice from one lemon, 1 tbsp olive oil, and dried dill. After stuffing the fish, I salted and peppered it and poured my sauce over it. It came out juicy and delicious! I plan to make this for my future in-laws when I go to visit in a few weeks. I think they will be impressed!

Easy Indian-Style Chicken

This is a good, easy, Indian-ish dish. I add extra chili sauce to it and use light coconut milk. I will make it again.

Beer Margaritas

This was delicious! So delicious, in fact, that it can be a little dangerous. I read on other reviews that using all of the tequila is too strong, so I started with half. That was too sweet for me, so I ended up adding almost all of it. Ole!

Curried Carrot Soup

I am addicted to this soup! It tastes creamy and a little sinful but it is so healthy! I use fat free low sodium chicken broth. This is probably my bet allrecipes.com find. It can be a little heavy on the curry though so if you're not a curry person I would cut back.

Spinach Enchiladas Verde

My fiance and I both love these! I add black beans and a little onion and use whole wheat wraps instead of the corn tortillas to make them healthier. I also tried it with plain yogurt instead of the sour cream and it is still very good, you almost cant tell the difference!
