Scottish Shortbread II

Yummy shortbread recipe. Good texture and taste and very simple to make. I was worried about my crumbly mixture but once I packed it into the tray it was fine. I was able to cut it really easily once it was cool. I will make this recipe again.

Pita Chips

These are a great party snack and my guests really liked them. I will make them again but will play with different herbs until I find my favourite mix. I split 8 mini pitas down the middle and cut each half into 4. In my oven they took longer than 7 min and I also turned them once.

Teriyaki Pork Tenderloin

Wonderful! I had never cooked pork before and usually don't really like it either but this was amazing! Super tender and the flavours are delicious! I am definately going to make this many more times!

Asparagus Cashew Rice Pilaf

This was really yummy and I will try making it again. Definately double the asparagus as there is a lot of rice. My pilaf soaked up the liquid really quickly and I had to add extra water which compromised the taste a little - next time I would use more liquid to start with. I will definately try this again, it was my first ever pilaf and I'm sure I can do it better next time.

Roasted Beets with Feta

Super yummy side dish - this one is a keeper. It is really simple and with the beets in the oven you are free to prepare other things. My guests loved it and asked for the recipe. :)

Ultimate Irish Cream Chocolate Mousse

Wow, wow, wow! :) This is an awesome dessert. I had never made a mousse before but it was really easy and looks super impressive. It was a huge hit with my dinner guests and I will definately make it again. I did use a big extra splash of booze and I garnished the top of the cream with a sliced strawberry. It turned out so beautifully that I can't wait for my next dinner party!

Chicken Breasts with Balsamic Vinegar and Garlic

I really enjoyed this dish. The chicken was delicious and juicy. I loved the balsamic and mushroom sauce. I omitted the flour as others suggest and added a little cornflour to the sauce. I will definately make this recipe again and would be happy serving it to friends.
