About this Cook
I am a single mom of two, who often cooks for extended and adopted family members. I grew up eating delicious home-cooked food growing up on a farm, and started cooking for the entire family by the age of 15. Worked for a while in the restaurant industry, but would much rather cook in a not so fast paced atmosphere. I would like to take culinary classes someday. I also own over 200 cookbooks.
My favorite things to cook
Italian is my first and foremost favorite. I like to take recipes and make them my own, and I am not afraid to try anything at least once. . .if it's not good, that's what take-out is for.
My favorite family cooking traditions
Christmas tradition of the past was when my younger sister was unmarried and she would come stay at our house on Christmas Eve, and get up early on Christmas morning and make Christmas breakfast for the whole family while drinking mimosas - we would have breakfast pizza, french toast, sausage, bacon, and cinnamon rolls.
My cooking triumphs
My biggest cooking triumph actually has nothing to do with actually cooking a meal, but the complete do-it-yourself remodel of my horrible inefficient kitchen, to a kitchen where the whole family gathers.
My cooking tragedies
The worst thing I ever made was supposed to be a bbq cheeseburger casserole. It was one that not even the most adventurous eater in the family would consume.

Easy Granola Bars
Flavor good - I used chocolate chips, macadamian nuts, banana chips, and then 2 1/2 cups oatmeal and 1 cup special K with berries - but it was super dry - my daughter thinks she broke a tooth eating it. Don't think I will make it again, although it might be ok if I pour some milk over it and eat it like cereal.

Szechwan Shrimp
I thought the recipe was ok. I didn't use ketchup, instead I used bottle chili sauce. I added stir fry vegetables which my guy didn't like - should have just followed the recipe as is (he can be picky about his food). Otherwise, an ok recipe - don't know if I will make it again as it wasn't that memorable, and I would rather have shrimp be the star than the sauce.

Hot Peanut Sauce
This recipe is 4 stars on it own - and it's an excellent base point to start at. I ended up adding minced garlic, curry powder, more red pepper, and quite a bit more soy sauce and peanut butter. It was excellent on whole wheat noodles, and on the side with grilled chicken breasts. The kids, however, were not amused with the fact that I used peanut butter on something other than on bread or in cookies.
