About this Cook
I tend to express my love for someone by shoving food into their mouth. I love to cook; it somehow relaxes me, entertains me, and makes me feel very useful and purposeful like no other task can.
My favorite things to cook
I will try any recipe once. My favorite things are baked goods--they excite my soul like little else, they are my true passion. I also love experimenting with cultural foods: Mexican, Italian, and Chinese, just to name a few.
My favorite family cooking traditions
Pretty much your typical traditions-- holiday meals, special occasions, but I think my favorite tradition is 4th of July when the whole family gets together for a huge barbeque. So fun!

Thanksgiving Dinner...from scratch...for the whole family...all by myself...Triumph!

Awesome Sausage, Apple and Cranberry Stuffing
This was not just awesome stuffing--it was bitchin’! I will use this recipe every Thanksgiving from now on because it’s pretty much fail-proof. I did change the recipe a bit however. To start with, I used Mrs. Cubbins herb seasoned stuffing mix for convenience, sage sausage for flavor, grated my apple, used craisins for the dried cranberries (they were all I had), fresh herbs and added walnuts for a crunch that would have been lacking. Also I added a carrot, onion, and celery that I sautéed with the sausage. Then mix the thing together adding only enough chicken stock to moisten and covered with foil and baked about 30 mins then removed the foil and let top get crispy. Oh great time of day it was delicious! Thanks for a new favorite Stacy—I love it.

Grandmother's Buttermilk Cornbread
I find that sometimes the simplest things to make are the best things to eat. So is the case with this cornbread. It was just flawless—moist, sweet, and classic. I cut down on the sugar by about 1/4 cup so that I could replace it with honey, which added a little more depth of flavor to it. I also found this recipe as easy to throw together as packaged cornbread mixes so I will never go back. I topped my piece with homemade honey butter and devoured it before I even got my chili into the bowl. Very delicious!

Pumpkin Pancakes
I really liked these pancakes. While trying to make my money go farther, I occasionally make breakfast for dinner and was surprised that no one complained about this meal. I stuck to the recipe but did add more pumpkin (about 1/3 cup more) and doubled my spices. I made homemade honey butter to top them with and it was perfect. I will definitely be making these again very soon.
