Chicken Tikka Masala
One of my favorite recipes to make! I let the chicken marinate overnight, and cut down the salt to 1 tsp for the marinade and 1 tsp for the masala sauce. I add a few teaspons of fresh garam masala, I like a more potent sauce. I will also add a couple teaspoons of amchur (mango powder). I omit the jalapeno and paprika, and use 1/2 tsp ground red chili. I don't have a grill, so I put the the oven on broil and put the chicken breasts directly on an oven rack, wiping off most of the marinade beforehand. Cook 6 min each side, with a tray underneath to catch the drips. Using half n half comes close to the flavor of full cream. If sauce isn't thick enough, throw in a quarter cup of finely ground cashews. Excellent with the Naan and Chole recipe on this site.
