Rich and Creamy Tomato Basil Soup

This was very good! Although unlike other reviewers, I don't think it requires the cream to make it so delicious. It's the amazing flavor the basil imparts! I will try it with milk next time to see if I can make a healthier version that still tastes great.

Baked Havarti Chicken

Made as written, and the BF called it "the best chicken I've ever had". Now, I've heard that line before...but very infrequently at best. Delish for cheese and chili pepper lovers alike!

Shrimp Burritos

This is quite good! For you cilantro lovers out there, adding a few teaspoons of chopped cilantro to the yogurt sauce added a delicious twist. And I think sour cream could be an easy substitute for the yogurt/mayo combo that would taste just as good. Great recipe!

Best Tuna Casserole

This recipe was totally bland! I did add an extra 1/2 c. of milk to the original recipe and baked for 15 minutes, so the casserole was nice and moist. But to make this recipe truly wonderful, you MUST: saute those onions and mushrooms first, throw in a clove or two of garlic, and add at least 1/2 tsp of salt and pepper. I couldn't even taste the tuna in this casserole, so I would add another can of tuna as well! Casserole out of a box has more flavor than this recipe as is.

Southern Grilled Barbecued Ribs

This is the BEST bbq sauce I have ever TASTED. We used a smoker box with wood chips in the grill to give it that perfect smoked flavor. I was shocked the ribs were so delicious with such a short cooking time, but they WERE!

Easy Cajun Jambalaya

I can't imagine jambalaya without shrimp and a tomato based sauce, so I added a half pound of shrimp and a can of diced tomatoes. Ahhhhhh.... Also substituted brown rice and turkey sausage to be on the healthy side. I cooked the rice separately in chicken broth and then added it to the gamesh at the end. I substituted cajun seasoning for hot sauce, and it was just right. One suggestion if you're going to have leftovers: add a healthy splash of chicken broth and that teaspoon of hot sauce right before you put it in the fridge. The heat and moisture continue to be absorbed by the rice, so these adjustments will kick start your leftovers for perfection.

Chicken Florentine Casserole

I made a healthier version that did not suffer at all! I'm a firm believer in fresh is better so I used a whole bag of fresh spinach and fried 4 strips of bacon. To avoid immediate cardiac arrest, I used skim milk instead of half and half, only 1 cup of mozzarella, and Healthy Request mushroom soup. It was delicious! If you really want to cut calories, you could even omit the bacon and mozzarella because the rest of the ingredients were so flavorful together. Still no substitute for butter though! :) I also skipped the first two steps (no need to cook the chicken first) and started by sauteing the mushrooms and spinach in a little butter. I then mixed in the other ingredients with a splash of white wine. I arranged the chicken in a casserole dish and dumped the sauce over the top, followed by the crumbled bacon. I baked at 400 for 25 minutes covered, then topped with mozz and baked 10 minutes more uncovered. I would call this a chicken bake instead of a casserole, but I will make it over and over.

Stuffed Shells I

Used manicotti since the grocer was out of shells plus fresh parsley and basil--several tablespoons of each, you simply can't overdo it--and a tomato meat sauce from the 'World's Best Lasagna' recipe. Satisfaction guaranteed.

Slow Cooker Chicken and Dumplings

From other reviews: sub chix broth for water; add a few shakes paprika, poultry seasoning, seasoned salt, pepper, parsley; sub one can cream of celery for cream of chix soup; tear chicken just before adding biscuits; mix in couple tbsp flour pre-mixed in cold water if too much liquid prior to adding biscuits; add biscuit dough after 3.5 h; total cooking time 5 h on high.

Jen's Fresh and Spicy Salsa

Want to kick this salsa up a notch? Forget the jalepeno, hot sauce, and pepper. Add several chipotle peppers in adobo sauce (found canned in the Mexican aisle) for an awesome chipotle salsa that is just as fresh and even more amazing! I also used fresh garlic and a half teaspoon of cumin... You won't be sorry!

Sweet and Sour Pork III

OH. MY. GOD. OMIGOD. YES. YES! YESYESYESYESYES!!!!!.....Ahhhhhhh...... Take the other reviewers advice and do not combine the ingredients until ready to serve. Have 4 pots and pans on all 4 burners at the same time. It's not even bad, because you can prep it all first and then just stare at it and wait for it to cook. Then throw the sauce (1), veggies (2), and pork (3; drained of course), on top of the rice (4), and you will have the best S-N-S pork you have ever eaten. MWAH!

Thai Chicken with Basil Stir Fry

This stir fry is really good but the flavors in the sauce are so complex it is difficult to taste any of the individual ingredients. I might try it without pepper flakes and ginger next time to bring out the basil and coconut...?

Chicken Broccoli Ca - Unieng's Style

The ingredients in this recipe are spectacular together. The cook times suggested are not. Substitute 5-7 minutes for each recipe segment that recommends 10. A couple other helpful hints: My sauce was completely reduced by the time I added cornstarch, so I added back about 3/4 c. water (this will vary depending on cook times). I also added a generous splash of soy sauce and oyster sauce here to bring out these flavors. Finally, do not add the bok choy until the last minutes of cooking so the leaves maintain some crispness instead of resembling soggy spinach. The flavor of this recipe couldn't get any better. Oh, and beware that a whole teaspoon of pepper makes this dish pretty spicy. Use a half teaspoon if you want to avoid that.

Pumpkin Pancakes

Hint: Due to the thickness of the batter make these pancakes small so the middle has time to cook through before they are overly browned or (godforbid) black!
