About this Cook
I am a recent college grad, living on my own for a year before I move back in with the parentals in this noble pursuit I hear of called Grad School. I want to be a librarian one of these days, preferably in Special Collections, Reference or Youth Services.
My favorite things to cook
I live on a pretty tight food budget. I used to go out to eat all the time, but I'm more of a homebody these days. I cook with beans, vegetables and lentils very frequently because I used to be a vegetarian and I'm a little more comfortable and creative with them. My favorite dishes to cook: Chana Masala, a spicy tomato and chickpea Indian dish; Chicken Pot Pies; Vegetable Soup; Thai Chicken and casseroles of any kind!

Sally's Spinach Mashed Potatoes
This is so yummy! I also didn't peel my potatoes. To make it a little more healthy, I used just enough sour cream and butter to make the mixture creamy. I will definitely make this recipe again!

Taco Quiche
I made this recipe subbing chili beans for the ground beef. I combined the beans with stewed chili tomatoes and fresh onion and red and green bell pepper. I have to say I was skeptical about using baking mix, but this is fantastic comfort food! I will definitely make it again.
