Michelle's Soft Sugar Cookies
We tweaked the recipe to fit the ingredients we had at home, and my kids LOVED them! We looked up substitutions on cream of tartar since that isn't something we keep on hand, and found that 4 tsp. of lemon juice = 2 tsp. of cream of tartar. We also used lemon extract rather than vanilla and did 1/2 c. margarine, 1/2 c. of shortening since we only had one stick of margarine in the fridge. They were great! Just a hint of lemon flavor (not overpowering at all). This is now my standard Sugar Cookie recipe. Way to go, Michelle!
