Sweet Corn Muffins
These were really tasty muffins. I only used half the amount of sugar and thought that was perfect. I also worried about the shortening but I mixed it up in the kitchen aid mixer and it worked fine. Simple recipe why buy a boxed mix!

Honey Baked Chicken II
I made this for a picnic and had no leftovers. Yummy and so easy.

Old-Fashioned Potato Pancakes
Very Good! I have never had potato pancakes but my sweetie requested them. He said they tasted just like his mothers. I did place the potatoes in a tea towel like someone else mentioned also omitted the parsley.
