Skillet Ham, Cabbage and Potatoes
This made my Irish blood smile :) I cooked the onions and the ham together first as suggested by other reviewers, and boiled the fresh, thickly sliced potatoes in a separate pot while the cabbage simmered. I used 1/2 a can of chicken broth when simmering the cabbage, and the other 1/2 when I added the potatoes. Skipped adding more sodium, added an extra dash of paprika. DELISH!

Microwave Apple Crisp
Ovens are a rare commodity in China (where I'm currently living) so I was so excited to come across this recipe. I made it yesterday and it was so delicious! It's even great the next day, cold (eating right now!). Instead of allspice, I added a pinch of clove, and I added a drop of vanilla into the butter before mixing it. I also topped it after cooking with some granola to get that oven crunch. Worked out pretty well. And it was so quick and easy! Thanks!!

Old-Fashioned Italian Zucchini Fritters
I made these last night for friends, and they were delicious! To get rid of some of the water, I put the shredded zucchini on some paper towels before adding them to the egg mixture. They were still a bit soggy, especially after sitting out for awhile. Popping them in the oven and baking them for a few minutes might give them a nice crunch. I might add some shredded carrots to the batter next time to give them some more color too.
