Chicken Enchiladas

I used two cans of red enchilada sauce. 3/4 can in the pan, 1/4 in the bottom of the baking dish and another full can on top. I tossed about. 1 tblspoon of chili powder into the pan as well based on other reviews. Plus, added about 3/4 cup cheddar on top of the rolled enchiladas, and topped with 1/2 cup sliced jalapeƱo and one small can of diced black olives. I had whole wheat tortillas on hand and used them in lieu of the corn (although not excrly authentic, this really help the texture IMHO) This recipe may be great on it's own as well, I'm just a better cook when I veer from the recipe a bit!

If you've never had Aebleskivers you are missint out! Great recipe. I topped mine with a mixture of fresh/frozen strawberries and fresh whipped cream. A delight!

Easy Lasagna II

I added 1/2 red wine, 1/2 water and I think it made it richer. My husband said now he'll never have to buy frozen lasagna again and he's right this is a lasagna recipe I will definitely make again. OH-SO-EASY, and perfect for omitting and adding. Next time I'll try vegetarian!

Garlic Parmesan Chicken

Very delicious! Easy to make, and most ingredients I already had on hand. I used 2 boneless breasts and approx. halved the bread crumb mixture and cooked 35 minutes. I will add this to my chicken repertoire!

Chocolate Brittle Surprise

Rated a 5 based on the easy factor. So easy, and oh-so-delicious. I was skeptical, but this delicious and easy dessert deserves it's high rank! I added heath pieces to the top instead of pecans and baked for around 12 minutes. The edge pieces were almost burned, so I removed them just at the right time and then stuck in the freezer for about 12 minutes instead of the fridge. (My husband doesn't do patient.) :)

Garlic Cheese Chicken Rollups

Delicious and such an easy meal. I use the lower fat Rondele brand Garlic and Herb cheese, and dip breasts in egg instead of butter. This is such an easy recipe to add/delete ingredients. I've tried numerous changes like adding spinach, finishing off with marinara, and adding bacon. Can't go wrong with this one!

Sue's Two-Chocolate Chip Cookies

MMMMMMM! My favorite cookies, that come out looking like PERFECT bakery bought cookies every time. My changes: 1/2 cup butter and 1/4 cup vegetable oil and add 1/2 cup shredded coconut. These cookies disappear and are best right out of the oven!

Oreo™ Cookie Cake

If you are looking for an easy (and beautiful) recipe to take to a party or to the office. LOOK NO FURTHER. This is a gorgeous dessert, easily presented and absolutely delicious. I used lo-fat chocolate pudding and 1/3 less fat cream cheese, and it was still so flavorful and disappeared from everyone's plates! A MUST for Oreo lovers!

Sausage Balls

Pretty good but not exceptional for me. The first batch I made on a cookie sheet with a lip. They were WAY too greasy; spread out and burnt on the bottom. Those were thrown in the freezer for easy breakfast food. Second batch, I read reviews and baked on a wire rack over the same lipped cookie sheet. They were much better, but so messy.

Choco Shortbreads

My first attempt at short bread. I followed the recipe for the dough, and omitted adding the chocolate chips to the mixture. I rolled out on a floured board and cut out heart shapes. Instead of drizzling the melted chips over the cookies after baking, I used a small spatula to spread chocolate over half of the hearts making a heart shaped black and white cookie. A hit with my husband, who was suspicious of shortbread cookies before! :)
