I just moved out on my own and I am learning how to cook for myself. Its hard to find things that taste like mom's cooking, because I tend to burn alot of things. For the first few months of living on my own I was eating frozen & boxed meals. I hardly ever used my oven or stove, my microwave was my best friend! But frozen dinners started to get expensive so I dug out some cookbooks and started cooking.
My favorite things to cook
The only meat that I cook & eat is chicken. Its so versital and easy and it tastes sooo good! I like to make meals that work well for leftovers that I can take to work. I make alot of casseroles and I'll usually add chicken to a simiple noodle & veggie casserole.

Classy Green Bean Casserole
I was really pumped to make this recipe, because it was one of the few recipes that I found that didnt call for milk [I just ran out] and I had lots of sour cream that I wanted to use up. I made this in two smaller dishes, I put the cracker topping on one and cracker & cheese on the other, like another reviewer mentioned. I baked this for 25 minutes and it looked delish when I took it out of the oven. I scooped a bunch in a bowl and started eating it, but after a few bites I got sick of it. Its too sour creamy for my taste[I only used 1/2 cup]. Probably not something I will make again, but thanks for the recipe.

3-Cheese Pasta Bake
This was the first meal I made for my boyfriend, so I really wanted to impress him. I doubled the recipe so I'd have enough for leftovers, but I wrote the recipe down wrong so I only added 1 cup milk instead of 2 cups like I should have when I doubled it. I used 1 package of 2-cheese blend & 1 package of cheddar cheese, & 1 package of parmesan cheese. I added 4 cooked chicken thighs that I had cut into cubes to the mix. I cooked it for about 5 minutes longer than said. My boyfriend loved it! He had seconds & thirds! I on the other hand didnt really like it, it was to cheesy for me. But I had it for lunch the next day and I loved it. Def. better the second day around. I now make this recipe almost weekly, its an easy to make and works well for work lunches. I like to add peas, celery, & onions. I also added sour cream once because I needed to get rid of it & it tasted great! Its a simple easy recipe that you can change to make it your own. A sure keeper!
