Mexican Cornbread I
Good recipe! I used fresh corn, doubled the milk to compensate for the lack of jucie in the creamed corn. I also used 2 C of shredded cheese and about 5 slices of crumbled pepperjack. Very good and cheesey!

Pear Coffee Cake
This was a good recipe. I like how the cake had cocconut in it but you couldn't really taste it...it just helped to keep it moist. This is a recipe that I will keep but it was not a "wow" recipe.

Ranch Bean Dip
Great way to use up leftover cheese and beans!! My kids loved it and I felt like it was a healthy snack. We used whole wheat crackers and triscuits bc that is what we had on hand...delicious!
