Double Chocolate Mint Cookies
LOVE this recipe! I agree with other reviewers who only used 2 cups of butter, and increased the peppermint extract to 2tsps. I dipped the tops in egg white and then crushed peppermint candies for a wonderful effect. I'm going to use the same dough for another variation. I'll put in butterscotch chips and top them with Skor bits. Thanks for this keeper!

Thumbprint Cookies I
This tasted great, but I could not get it to cook all the way! I added 5 minutes onto the cooking time and it was still a raw texture. Not sure how much extra time would be needed.

Marinated Broccoli
Absolutely yummy! My only problem with it is that there is not enough of it! So I doubled the marinade recipe and added lots of other veggies - quartered mushrooms, red pepper, red onion, snow peas, and cauliflower. I also added chickpeas, sunflower seeds and pumpkin seeds to add a complete source of protein and make it into a meal in itself. I'm taking it with me to the lake tomorrow. Looks like it would pack and travel quite nicely too!
