Shortbread Supreme

Awesome, simply, easy recipe. I wanted to make sugar cookies for the kids to decorate for Christmas, but didn't want to take the time to refrigerate the dough... found this recipe and followed it exactly. At first I thought I'd done something wrong - the dough seemed super crumbly - but as I started working it and rolling it it smoothed out nicely. The cookies are VERY fragile while still warm but once cooled they're firm & won't break... they held their snowman, Christmas tree, and candy cane shapes very well without the cookie itself being hard to bite into. VERY tasty and a fun, easy, quick cookie to make. This has definitely become my "Go To" recipe. I brought a plate of these to a church function and they were gone instantly!

One Bowl Brownies

I had last minute dinner guests - family in town came over for a bbq - and was searching for a quick dessert... hoping to find something tasty that included ingredients I already had on hand. These brownies were very easy, quick, and very tasty. They were a hit. I LOVE chewy brownies (not cake-spongy ones) and these were definitely chewy. Only thing I did differently was that I didn't have any unsweetened chocolate squares on hand so I substituted cocoa powder instead (the substitution is 3T cocoa powder plus 1T cooking oil for 1 square of unsweetened chocolate) and it worked perfectly. To spice things up a bit I sprinkled some chocolate chips on top when there was 5 minutes of baking time left. Very good brownies that will definitely bake again!

Oatmeal and Applesauce Pancakes

I really liked these pancakes. They weren't lying when they say in the description that they're moist pancakes, because they are very moist. They have a good flavor and are quite tasty.

Easy Pancakes

These pancakes are good, basic, easy pancakes to make. I followed the recipe exactly and thought they turned out perfectly fine. I did notice that they turned out a little better after the batter had sat for a few minutes.... I sprinkled some blueberries into them as they were cooking and that was a great addition. Otherwise, I followed the recipe exactly.

Flank Steak with Garlic Wine Sauce

I like simple recipes, and this one is pretty basic - yet so tasty that my entire family gobbled it down. Even my 3-year old! The sauce was delicious and the meat tender. I will definitely make this again. I didn't make any changes, necessarily, except I forgot to buy scallions so made the recipe without them and it turned out fine.

Zucchini Pineapple Bread I

I thought this recipe was good - although I tweakfed it a bit to make it healthier. I substituted apple juice concentrate for half of the suger (3/4C ajc for 1/2C of sugar) and I subbed ground flax seed for some of the oil (3parts flax seed for each 1 part oil - so 1/2c oil = 1 1/2c gr flax seed) and I used whole wheat flour instead of all purpose. It bakes a little quicker due to the lack of oil and ends up being a heavier, more substantial bread. It is still quite yummy though, but without the guilt. My entire family gobbled it up (including toddler and pre-schooler) without noticing the "healthy" changes. Next time I might add a bit more pineapple than is called for to account for the lack of oil.
