About this Cook
i love food, i love planning and preparing food, getting creative, trying new things and sharing with my friends and family :) I'm trying to eat healthier, so I like to modify recipes to cut back on the fat when I can. I think I have a good sense of humor. Im silly, I love to laugh, spend time with family & friends, enjoy a good cocktail hour and love travelling.
My favorite things to cook
Enchiladas - Pork - Jalepeno Tequila Lime Chicken - Salsa - Guacamole - Potatoes - Eggs. I love when I have the occassion of using my fryer, to make french fries & corn tortilla chips and such and i'm going to try baking some doggie treats for my 2 year old Boston Terrier Mingus

My cooking triumphs
Any time something comes out tasty it's a triumph for me, but I think my most surprising triumph was a shrimp cocktail with a jalepeno, orange & lime salsa, that was a hit at a get together.
My cooking tragedies
I was cooking enchiladas for friends and the sauce came out waaaaay too hot! We all had sweat on our brow the whole meal & despite that My loving friends and husband still ate them.

Garlic Salmon
looks delicious and the dill and green onion are fabulous. I had 2 salmon filets, so I also throw in two halved garlic cloves into the foil and little lt. butter

California Chicken
i originally gave this 4 because i thought it needed a little more spice, but i gave it 5 because it was inspiring :) I used fresh garlic and lemon for marinade and rubbed the chicken in s&p, paprika & garlic powder. i also added sliced black olives for the topper mmmm delicious! thanks for the recipe!

Spicy Tomato and Lentil Soup
very good and easy. First time making lentils, and i now like lentils :) This needed a little more seasoning for my taste, so I added 3 cloves garlic and used a whole, seeded jalapeno, 1 full tsp cumin, dashes of celery salt, 1 can fat free chicken broth instead of water and a pinch of mexican oregano. More fresh basil would be excellent in this. I have a tomato garden in bloom so I used 4 medium fresh tomatoes, instead of canned. This is a hearty soup, and excellent with the recommended sour cream and basil garnishes. Thank You!!!
