Average working mom. Very much enjoy cooking when I have time, but with baseball games, football games, wrestling, dance classes, baton lessions, etc. most dinners are quick/easy meals.
My favorite things to cook
In cold weather I love making soups and stews, I am always looking for new recipes to try. In hot weather, I like to try different type salads and new grilling ideas
My favorite family cooking traditions
Didn't really know I had one until the first really cold day we had this fall and my husband came home from work and asked if I had made chili. He was glad to see I had made a big pot of soup, but my response to him was, "you know I don't make chili til the first snow." So I guess this is my tradition.
My cooking triumphs
Christmas dinner last year (2007). It was the first year we had Christmas at our house with all family coming. I made the traditional favorites but also some new items for a variety, such as Green beans with bacon, and spinach salad.

Quick Eggplant Parmesan
Wonderful recipe. Very easy and tasty. I did take other reviewers tips and after frying the eggplant, I placed on a baking sheet and spooned spaghetti sauce on and topped with cheese then baked until cheese was bubbly and slightly browned. Family (even my son who is a picky eater) loved it. I served it with left over spaghetti and meatballs and garlic bread. What a hit!!! Will definately make this again. This is the first year we have grown eggplant in the garden but will from now on for sure. Thank you for posting this recipe.

Summer Zucchini Casserole
Fantastic recipe. Made it for a family picnic and everyone asked for the recipe. This worked out to my advantage because I have lots of zucchini in the garden growing faster than I can keep up with so I also sent home zucc's with everyone along with the recipe. The only change I made was to sautee the zucchini, onion, and carrots in small amt marg and some water until tender instead of boiling. My six year old loves this, she would pass up choc cake for a plate of this. I will definately be keeping this recipe. Thank you for posting it.

Cheese and Sausage Stuffed Zucchini
This recipe is great, very flavorful. I did add about 3 cloves of fresh pressed garlic to the cheese mixture but then omitted the garlic powder. I think my zucchini must have been smaller than what was called for because I had enough of the fillings to make 3 zucchini halves, so I took some to my parents to try, they also loved it. I have a good zucchini plant in the garden this year, will definately be making this again. Thank you SABRAMARIE for posting this recipe.
