About this Cook
I'm 23, I have two small children, and I work full time. I mostly cook recipes that a are quick, easy, and healthy. I don't have a lot of time to cook, and nutrition is extremely important to me.
My favorite things to cook
I usually cook pasta with stir fried veggies, when I can't think of anything different to make.
My favorite family cooking traditions
I love my family's cranberry sauce that only makes an appearance around Thanksgiving. Since I'm married and on my own now I should be getting the recipe soon. I also love my grandfather's fudge, straight from Germany.
My cooking triumphs
I made incredibly attractive and delicious spinach stuffed mushrooms on a whim one day and blew everyone away. My most requested dishes are banana bread and fruit salad.
My cooking tragedies
I've ruined my share of food, usually by getting involved in something else while the food is cooking and burning the food beyond recognition.

Beth's Spicy Oatmeal Raisin Cookies
As others have said, this is the same as the recipe on the Quaker box except that part of the butter is switched to shortening (making them unhealthier) and except for the addition of cloves. Because of this, I was disappointed that this is in the top 20 recipes for this website.

Pizza Casserole
This recipe was alright but it didn't really taste like pizza, and the flavor wasn't anything awesome. I didn't have pepperoni so I added mushrooms. I also added oregano, basil, and parsley. I used egg noodles as specified, but I think someone else recommended rotini and I agree. If I make this again, I'll alternate layers of the beef noodle mixture, a flavorful cheese blend (maybe mozzarella, feta, and parmesan), and Italian bread crumbs.

Pasta With White Clam Sauce
This recipe resulted in WAY too much liquid for my taste. I probably should have started the sauce long before the pasta to allow it time to cook down some. I ended up ladling the sauce over individual servings of pasta and didn't even use half of it. Also, my kids complained that the sauce was too "fishy". In addition to the Parmesan, I crumbled some feta on top and it went really well with this dish. Served with shrimp. In all this recipe was alright, but I doubt I'll make it again.
