Ginger Veggie Stir-Fry

What a fast, easy, and delicious recipe! I did use tofu, which I had thawed from frozen and stir-fried before throwing in the veggies to make for a slightly crispy outside. I also added a little garlic-chili sauce to the vegetables and a little pineapple juice (as another reviewer suggested) which added the perfect amount of sweetness to match a little spicey and salty flavor. Lastly, as this recipe states, you can throw in almost any veggies to make this great! I used canned green beans myself (the kids don't like fresh or frozen..)as well as canned bamboo shoots and water chestnuts I had on hand. So tasty and the kids loved it! A definite to make again.

Tofu Burgers

These tofu 'burgers' were great! Warranted, getting them to hold together was a challenge, (I added a dash of bread crumbs) but once they were in the pan, the oil kept them all in individual patties. I did add a little Adobo seasoning, parsley, and finely chopped red cabbage (in place of the onion) and about a tsp of dried minced onion. The consistency was a little more "fried chicken sandwich" than "burger" but delicious all the same and the whole family, including the meat-eaters, loved them.

Moroccan Lentil Salad

This recipe was fantastic! I took another reviewer's advice to add feta cheese and I have to say that it added the perfect bit of tang, blending well with the spice of the dish. I served it warm over brown rice topped with a little baby spinach salad mix. Delish!

Coconut Curry Tofu

This was a really good recipe but I did make a few changes that made it great! First, I drained/pressed the tofu for about 1/2 an hour and then stir-fried it in coconut oil to give it that extra coconut flavor. I also added about a tbsp of lemon zest. I think next time I'll pick up some lemongrass and really make this stand up to my favorite Thai restaurant. :D Like most folks here, I served it over rice.

Autumn Apple Salad II

This recipe was OK, especially considering how quick it was to throw together. It was somewhat bland. It tasted good but had no zing. I might try a couple of different combos to make it tastier, like lemon or flavored yogurt..

Artichoke Spinach Lasagna

Excellent recipe that the whole family enjoyed, even my slightly spinach squeamish son. Might add something for a little more tang/kick next time, perhaps a little more garlic, but overall a great recipe.

Orange Beef-Style Tofu Stir-Fry

Yummy! I was surprised at the wonderful texture of the tofu. The only changes I made were to use orange concentrate from frozen instead of reg. oj and asian chili garlic sauce as opposed to reg. chili sauce. Everyone loved it, including the kids. This one's def. going in my 'to make again' file..

Vegetarian Stuffed Peppers

"Wow!" is all I can say! The only change I made was to use vegetarian "beef crumbles" instead of tofu. All together this recipe blew my mind! The flavors were exceptional together. The funny thing is that I'm not big on bell peppers, but I thought I'd give it a whirl. Kudos for an excellent, fun, easy recipe. Note: my kids only ate the mixture out, not the peppers, but that's still awesome!

Angel Hair Pasta with Lemon and Chicken

This was really tasty, especially for one of those 'quick, throw something together!' nights. I did use tofu instead of chkn (I boiled firm, drained, tofu in veggie broth) then added the tofu, a splash of the broth, and about 1 c steamed broccoli to the mix at the end. It turned out very well and both the 9 yr old & 1 1/2 yr old liked it, which works for me!
