About this Cook
My name is Jessica and I live in MN. I live on a tiny lake with my mom. I love to cook and eat. I generally eat very healthy, which doesn't always jive with me always wanting to bake sweets! =) I take care of my 6 month old niece during the week and have a building I clean. I recently adopted a rescue dog from Kentucky, actually on the same day my niece was born, and shes a little over a year old. She's alot of fun but she is very naughty! My favorite things to cook
My specialty is baking. Everyone I know always comes to me if they need something for an occasion. I love to bake cakes, cookies, bread, bars, pies, candies and anything else. My family loves that I love to bake since they get to eat everything. I usually end up experimenting with recipes and just try to make them healthier.
My favorite family cooking traditions
I always love to have one big family get together at least once a year. My family doesn't celebrate Holidays, so we have it at other times. It's usually at me and my moms place, and I ususally try to do all the cooking. I love the challenge of having to make 5 or 6 dishes and have them get done at the right time.
My cooking triumphs
Cream puffs, an awesome coconut cake I make......Being able to make 7 dishes by myself for my family.
My cooking tragedies
Basically anything I tried to recreate healthy that tasted like a shoe. I once tried to make a quick bread but had way too much batter for the pan so after about an hour and a half it was just burnt and still gooey in the middle. =/

Spiced Applesauce Bread
This was ok. I added chopped apples, wheat bran and oatmeal to the batter. I also used yogurt instead of oil and agave nectar instead of sugar. If i wouldn't have added the apples, it wouldn't have had any flavor. It definitely needs at least double the spice.

Rum or Bourbon Balls
These are veryyy good. I was worried they were going to be too strong with how much rum was in them, but they weren't at all. I made them for my family get together, which means kids too, so I made a portion of them without rum and just added a little vanilla. Those were good too. It did frustrate me rolling them though because they kept wanting to break apart on me. I found it helpful to warm them in my hands and then roll it out. I don't think I can wait a week for them!

Lemon Poppy Seed Biscotti
These were ok. I didn't have lemon extract so I used a little more than 1/4 cup of lemon juice, which resulted in too wet of a dough so I had to add almost 3/4 cup extra flour. Even then it wasnt lemony enough for me. Next time i would definitely use lemon extract but more than 1 tsp.
