About this Cook
Homeschool mom to four great kids who will eat almost anything. I also work at the Master's Academy of Fine Arts -- a homeschool enrichment school that meets one day per week.
My favorite things to cook
Apple cake, pasta, baked sandwiches ... now that it's fall, I feel like cooking again!
My favorite family cooking traditions
My mom was into whole grains & non-processed foods way back in the 70s ... a lot of that has stuck with me! But Grandma always had shortbread in her cookie jar -- some of that has stuck too. (Oh my ... there it is on my right hip!)
My cooking triumphs
The best meals have come on days when we don't have ANYTHING in the house to make dinner with, and we really have to improvise. Some of those have been really good.
My cooking tragedies
Newly married, and pregnant with first child ... in Bradley class, we were advised not to eat ANYTHING with sugar in it. So, I made some pumpkin muffins, and replaced the sugar with orange juice concentrate. When I gave Jason his breakfast, I popped a couple muffins on his plate. I knew they were awful, and he was, um, less than enthusiastic about eating them. I asked if they were ok, and he didn't know what to say. Finally, it came out, "They're not really my favorite." He was so afraid of offending me! Well, then I told him that I fully agreed, and threw them all in the garbage can. Left him wondering why I ever put them on his plate! (Well, he might have liked them!)

Butternut and Acorn Squash Soup
The whole family fussed at me when I set some soup aside, to save for Grandma. They all wanted more, more, more! We cleaned up the pot with a rubber spatula so we wouldn't waste a drop. I have a 20+ year old Braun hand blender that worked like a champ on this soup ... no transferring! We used fat-free cream cheese ... it had been hanging around in the downstairs fridge ... we had all decided it was generally unfit for consumption, but I'm too much a miser to throw anything away. It was FINE in the soup. Nice creamy texture, and saved us a load of fat grams!
