Spiced Quinoa

Yum! The flavors and textures in this dish are really well balanced. The only substitute I made was toasted almonds instead of pine nuts. I'm really excited to have this for lunches this week. The extra bonus is that my house smells delicious.

Delicious Ham and Potato Soup

This really is delicious soup. I follow the recipe almost exactly; the only addition I make is fresh thyme. Besides being yummy and fairly foolproof, I like that I probably have these ingredients on hand right now.

Bean Soup With Kale

This is a solid base recipe. I didn't give it 5 stars because I tweaked it enough that it became my own recipe. But know that you can start with these basic ingredients and proportions and make a delicious soup.

Pasta Primavera with Italian Turkey Sausage

Very flavorful and versatile. You can substitute or add pretty much any veggie you want, or even swap out the protein. I substituted tortellini for the farfalle since that's what I had on hand. The addition of the bouillon helped balance out the tomato sauce--I think it's the key to this dish. I didn't add quite the amount of oil called for since there was a fair amount of fat rendered from the sausage.

Spicy Shrimp Creole

Very tasty, and you can adjust the amount of heat to your tastes. I added diced bell pepper along with the onion and celery. It's a versatile dish, so you could add many different kinds of veggies. Andouille sausage would also be a nice addition.

Sweet Potato Enchiladas

These were delicious. I didn't fry or dip the tortillas--I just heated them in a moist paper towel in the microwave, then filled, rolled, and added the sauce. That's how I always make enchiladas and it works well without the extra fat from frying or the extra step of dipping them in sauce.

Quinoa Side Dish

I get the concept here: it's kind of like tabbouleh but with quinoa instead of bulgur wheat. My family really didn't like this recipe, though, and unfortunately it was our first try at quinoa. If you try this, start with adding no extra salt (besides what's in the broth), and add a little extra lemon.

Black Beans and Pork Chops

I liked the overall concept of this dish. It's hard to find porkchop recipes that aren't breaded or swimming in fat, but this recipe just lacked something. The texture of the beans didn't add to the dish, and all I could taste was spice from the salsa. I might take this technique and play with the ingredients a bit.

Crumb-Coated Chicken Thighs

These were a big hit at my house. My husband thought they tasted a little like Indian food (from the curry), and my daughter like the crispy skin. We tried them with quinoa on the side, which didn't go over well..but that's another story. We will definitely make the chicken again!

Delicious Black Bean Burritos

I've made this recipe before but forgot how good it was. The cream cheese really makes the dish. Once you get everything prepped it takes almost no time to cook. My only change was adding 1/2 t. chipotle chili powder. Now it's creamy, spicy, and smoky--triple yum.

Grilled Salmon I

This was a good, middle-of-the road marinade. A little sweet, a little zip, some soy sauce flavor. I didn't have lemon pepper so I added a little lime zest. It was actually pretty good.

Asian Tuna Patties

I tried this recipe years ago on a dare to myself (I thought they sounded sketchy), but ended up loving them. My family really likes them, too--even my picky daughter. They almost have a crab-cake texture, they aren't fishy at all, and they reheat well for leftovers. Oh, and they're cheap to make. Always a bonus!

Chicken Fiesta Salad

This had fantastic flavor and was a nice change from our normal beef taco salad with taco seasoning. I thought the bean & corn salsa tasted a lot like Qdoba's salsa. The only change I made was adding 1 Tbsp. of light ranch dressing for extra creaminess, but a little light sour cream would work, too. We're adding this to our weeknight dinner rotation!

Moroccan Lentil Soup

This soup had great flavor, but I was the only one in my family that really liked it. Appearance-wise, it's not the prettiest. I couldn't find garam masala, so I had to fake it a little with some extra spices. The soup was great with some warm pita bread.

Brooke's Best Bombshell Brownies

These were really awesome brownies; a great balance of fudgy, chewy, and moist. Like several other reviewers, I used half brown sugar and half white sugar (mostly because I ran out of white sugar). The brownies came out great.
