Delicious Black Bean Burritos

This was a very flavorful burrito. My husband and I aren't vegetarians, but we try to eliminate meat a few times a week--this meal felt very satisfying despite being vegetarian. It reheated well the next day, too.

Grilled Salmon I

This was a good, middle-of-the road marinade. A little sweet, a little zip, some soy sauce flavor. I didn't have lemon pepper so I added a little lime zest. It was actually pretty good.

Asian Tuna Patties

I tried this recipe years ago on a dare to myself (I thought they sounded sketchy), but ended up loving them. My family really likes them, too--even my picky daughter. They almost have a crab-cake texture, they aren't fishy at all, and they reheat well for leftovers. Oh, and they're cheap to make. Always a bonus!

Chicken Fiesta Salad

This had fantastic flavor and was a nice change from our normal beef taco salad with taco seasoning. I thought the bean & corn salsa tasted a lot like Qdoba's salsa. The only change I made was adding 1 Tbsp. of light ranch dressing for extra creaminess, but a little light sour cream would work, too. We're adding this to our weeknight dinner rotation!

Moroccan Lentil Soup

This soup had great flavor, but I was the only one in my family that really liked it. Appearance-wise, it's not the prettiest. I couldn't find garam masala, so I had to fake it a little with some extra spices. The soup was great with some warm pita bread.

Brooke's Best Bombshell Brownies

These were really awesome brownies; a great balance of fudgy, chewy, and moist. Like several other reviewers, I used half brown sugar and half white sugar (mostly because I ran out of white sugar). The brownies came out great.

It's Chili by George!!

We make this chili a lot in the slow cooker. I use one 15 oz. can of diced tomatoes and one 15 oz. can of tomato sauce, 1 lb. of ground beef (instead of 2), and 3 cans of beans (1 pinto, 1 black, 1 kidney). Everything else is the same as the recipe. Throw everything in a slow cooker and turn on high for 6 hours. If you live at a lower altitude, you could probably do low for 8 hours. This is closest I have found to an authentic chili taste and consistency.

Italian Spaghetti Sauce with Meatballs

This was a fantastic recipe. Don't brown the meatballs, as other reviewers have suggested. Just cook them in the sauce like the recipe says. They were extremely moist and held together just fine. The only change I made was adding a little red wine near the end.

Slow-Cooker Chicken Tortilla Soup

This was a good base recipe, but it could use a little tweaking. The corn gave it a weird aftertaste. I would recommend adding it near the end so it doesn't impart too much flavor to the rest of the broth. I followed a suggestion and cooked the chicken in the broth, shredding it at the end. It turned out very flavorful and moist.

Magic Cookie Bars I

This is very similar to a recipe I used to make at a bakery I worked at years ago. It's great for people who don't like exact measurements and who like to experiment. At the bakery we used white chocolate, milk chocolate, and butterscotch chips, coconut, walnuts, and sweetened condensed milk. I have also tried peanut butter chips, almonds, and M&M baking pieces, all with great success. The only trick to this recipe is not baking it too long or the sugars in the milk will harden after cooling. Gooey-ness is the key!

Tuna Noodle Casserole III

This recipe gave me a lot of ideas, but what I ended up making was almost a different recipe (although a very delicious recipe!). I used rotini noodles, substituted a little milk and sour cream for the butter, stirred everything together with 1 cup of shredded sharp cheddar (instead of layering with American slices), added 1/4 t. cayenne, used panko mixed with olive oil for the topping, and baked for about 2o minutes. This is a terrific base recipe that you could modify in many ways. It's definitely getting added to the weekly rotation!

Bolognese Sauce

My family liked this sauce. We've been looking for a great Bolognese for a while. This was flavorful and complex; overall, a nice change from the marinara that we usually have. I'll probably use it as a weekend recipe, though, as it was too labor-intensive for weeknights.

Lamb Tagine

This recipe had all the flavor and tenderness of a lamb dish I have been seeking for a while. I only made some minor modifications--left the spice rub on for 36 hours, used regular tomato paste instead of sun-dried--and it came out very well. The cooking time was a little long for a weeknight dinner, but I will definitely be making this again during the weekend.
