Thanksgiving Leftover Casserole

I made this with 2 cups of my leftover homemade gravy instead of making a sauce. That made it even faster to put together and quite tasty, too. This casserole is as good as the ingredients you make it with.

Pesto Turkey Burgers

I wanted to use turkey, but I only had beef on hand. I made the burgers with blue cheese instead of feta, and I added Montreal steak seasoning instead of seasoned salt. I grilled these on a stove-top grill pan. Superb!

Ed Zieba's Famous Family Pork Chops

I made this for supper yesterday. I used an entire package of onion soup mix, but I took the onions out and rubbed the soup seasoning into the chops. Then I seasoned with black pepper, garlic powder and poultry seasoning, skipping the seasoned salt altogether. I poured the dried onions from the soup mix on top of the chops, then smothered the fresh onions over all. This was absolutely delicious! I will use the method of cooking for chops with other seasonings. I am anxious to try it with barbecue sauce.

Easy Pork and Sauerkraut

I made this today, but used dried dill. It was flavorful and delicious. My piece of apple disintegrated into the sauerkraut when I stirred it, and it tasted great anyway.

Chicken Creole

I made this for chicken yesterday, but I added more cayenne and some cajun seasoning. I added some shrimp, too. This would be wonderful over fish, perhaps tilapia or haddock.

Peppermint Eggnog Punch

Served a double batch for a party and was loved by all, even the "guys" who usually drink beer. I used mint chip ice cream which was green and had mini chips in it, as that was what my store had. I was worried about the chips, but they sank to the bottom of the bowl and were not an issue.

Mother's Ham Casserole

How nice to have a casserole that doesn't use noodles or cream soup. I served for friends last night, and everyone wanted the recipe. I doubled the recipe and used 3 cups ham. I made the sauce with 5T each butter and flour, and I stirred in some garlic powder and cayenne. I saved 1/2 of the cheese to put on top of the casserole and I used dried Italian-style breadcrumbs, but only 1/2 cup. (for the double batch) Well worth the effort to make.

Candy Cane Fudge

So simple and looks so pretty, too. I crushed 8 oz. of candy canes to come up with the amount needed for the recipe. The hardest part of this whole thing was peeling the cellophane off the candy!

Campbell's® Easy Chicken and Cheese Enchiladas

I made these for a casual company dinner, and I used multigrain high fiber tortillas. I also used the meat from a rotisserie chicken, which I always have on hand. My son thought these were the best enchiladas I've ever made, and they were definitely the simplest.

Black Bean Vegetable Soup

I made this recipe with a few variations. I used 2 (not 4) cups of BEEF stock, and I added 1 lb. browned ground beef. At the end, instead of stewed tomatoes, I used Rotel-style tomatoes with chilies to puree with the second can of black beans. Spicy and delicious!
