Peach Upside-Down Cake

Reviewed: Sep. 3, 2010
I made this and took it to a friend's house. They loved it and so did we. I did modify some things but I will give it 5 stars for a great base recipe for peach cake. I used 2 tbsp of butter instead of 1/3 cup and did not melt it (just spread it in the pan). I did not have eggs so I used 1/4 cup applesauce instead, and sprinkled extra coconut on the top when I inverted it. It was the BEST. I will definitely be making this again. Very easy to make!

Wheat Crackers

Reviewed: Jan. 6, 2010
Great recipe! I made them fat-free by substituting apple sauce for oil. Turned out fine. I used two variations of it. 1. Added sugar and about 1 tsp cinnamon (did not add salt). 2. Included salt and added 4 tablespoons of zataar (middle eastern herb/spice close in taste to oregano). This recipe made 4 baking sheets and not 1!... Frist time I baked it some dough stuck on the sheet so to avoid that, flour the side of the dough that you place down on the sheets. Great recipe!

Cardamom Banana Bread

Reviewed: Oct. 11, 2009
This recipe is great to start with! This was the first time I make banana bread and it is DELICIOUS. I made a few changes: I did not use raisins or rum, I used 1/4 c. canola oil (instead of 1/3), and I used cinnamon instead of cardamom. It turned out great like that and baked for exactly 50 minutes. I recommend these changes it tasted great...

Cinnamon Bread I

Reviewed: May 23, 2009
Great recipe! I followed the advice of mixing dry ingredients and wet ingredients seperately first. I did not use an electric mixer just a spoon and it turned out GREAT. It rose so well and tasted great. I will keep this recipe and definitely make it again and again. Thank you for such a wonderful recipe.

Easy to Make Ginger Cookies

Reviewed: Dec. 25, 2008
This recipe is wonderful! I used 1/4 c. applesauce and 1/4 c. smart beat instead of 1/2 c. shortenning. And I did not roll the dough I just made it into balls and flattened them with my hands. I used ground ginger instead of ginger roots. It came out VERY delicious crunchy at the bottom but soft inside. Thank you very much for this recipe. I will use it with different spices and flavors in the future.

Cottage Cheese Rolls

Reviewed: Sep. 1, 2008
These rolls were so good, so soft and tasty. I didn't use mashed potatoes flakes, I just boiled a chopped potato and mashed it. I will keep this recipe to use again.
