Eggplant Parmesan II
This is the first time I have ever made anything with Eggplant myself and it was great! My kids are a challenge when it comes to eating vegetables and they went back for seconds. I only used 2 Eggplants and also followed some of the other reviewers suggestions. I tried salting the slices with sea salt for 30 min before using them then rinsing them off and I baked the slices for 10 min, or more on each side (instead of 5 min on each side). I also realized I only had 8 oz of mozzarella instead of 16 oz so I just used a little extra Parmesan. This is going to be one of the ones we repeat alot. Thanks

Simple BBQ Ribs
I doubled the amounts of everything for 8 servings instead of 4. For the BBQ sauce I mixed KC's Masterpiece with Sweet Spirit Foods Hot BBQ sauce and then I added some honey and it turned out so good!

Okra, Corn and Tomatoes
This was great! I decided to buy some file powder on ebay and wait till I received it. It turned out great. I did have to add some extra water while simmering.
