Beer Margaritas
A friend makes something similar, and it is delicious. The difference is he doesn't add water, adds ice-cubes instead and a banana. The rest is pretty much the same. He mixes everything in a blender. Yum!

Mexican Lasagna
First off, my hubby gave this a "THUMBS UP," so I will definitely be making this again. I made a few changes, only because I am another lover of cheese... and garlic, so used a LOT of garlic powder, and doubled the hamburger. And cheese, I used 16 oz of Colby-Jack. I did as many suggested, and sprayed the pan 1st. Then added some salsa (just a little... before I put the corn tortillas in. (I spread refried beans on each of them before I put them in the pan to make things easier. I also did not use whole tomatoes, but added a few smaller cans of enchilada sauce and one small can of tomato sauce, since that was on hand. (My hubby doesn't care for dry food). I made sure my enchilada sauce was HOT, and the salsa! I did it in layers too! We topped it off with sour cream. D E L I C I O U S! The only thing is, next time I won't add the tomato sauce, and I think it will be perfect! Plus, I'll make sure I have some guacamole... and add olives. MAHALO for a very versatile recipe. YUM! : )

Flourless Peanut Butter Cookies
I must have something wrong...(maybe it was using a mixer.) I wasn't sure if I was just supposed to mix by hand or what. I used Skippy, and these came out very oily. I also wasn't too thrilled with the consistency. Plus these were too sweet. BUT I will give these another try, by doing what some have suggested, and adding oatmeal and trying another type of peanut butter, and less sugar. Because it is a very simple recipe, I feel it is worth playing around with. Thanks.
